I have a very simple recipe for stuffed peppers, that is is you have them available (I like the red, yellow or orange bell peppers) Even the mini ones work for this recipe.......

I just wanted to see if you liked stuffed peppers first.......let me know....

Get an oven proof dish and put your beef in,then add a little oil and some water ,then cut an onion into 4 and pop some potato's in and cover ,absolutely delicious.

Beef and Tomato Stew Recipe

You will need, per person:

1/2 lb (225g) of preferably shin of beef, but stewing steak will suffice (one-inch cubed)
400g tin of chopped tomatoes in tomato juice
3 closed cup mushrooms (quartered)
1 small onion (halved then sliced)
3 cloves garlic (finely chopped)
Large handful of flat-leafed parsley (roughly chopped)
8 to 10 basil leaves (roughly torn)
1 small red chilli pepper (deseeded and finely chopped)
1 tbsp plain flour
Salt/freshly ground black pepper
Pinch of freshly grated nutmeg
2 tbsp olive oil

Put the flour in to a mixing bowl and season well with black pepper only. Pop in your beef and stir well until all the beef is well coated. In a large - preferably non-stick - saucepan, heat up your olive oil then seal the beef in it. Carefully spoon the beef out on to a plate and sweat down the garlic and onion on a gentle heat for a few minutes, to soften but not colour them. Re-add your beef and all remaining ingredients except the salt. Bring to a simmer and continue to simmer for 1 to 1 1/2 hours on as low a heat as possible, stirring frequently. Taste a bit of the beef to ensure it is tender, then season with salt, garnish with a bit more parsley and serve with a chunk of freshly baked bread, or some boiled new potatoes.

Beef filets Oscar. Pan sear or grill your beef filets. Plate them, top them with lump crab meat and fresh asparagus and drizzle on sauce Bernaise. Serve with some glazed carrots and roasted tats and call it dinner.

SAUCY STEAK SPECIAL

1 ? lbs. round or family steak
1 Tbls cooking oil (your choice)
? cup chopped onion
1 10 ? can tomato soup
? cup water
? cup sherry
1 Tbls cornstarch
2 Tbls Worcestershire sauce
2 tsp soy sauce

Cut meat into serving size or bite size (my preference) pieces. Brown in oil in large fry pan. Add onion and cook until tender.

Stir in soup, water and sherry.

Combine cornstarch with Worcestershire sauce and soy sauce. Add to meat mixture and blend well. Simmer, covered, about 1 ? hours until meat is tender, Serve over noodles or rice. Check seasoning, may need some salt.

Beef Bourguignonne

3.5 lbs. Chuck (Cleaned and cubed 2”x2”)
Marinade: (24 hours) Then Discard!
1 750ml bottle of Red Wine (I use Pinot Noirs or Cotes De Rhone)
? Cup Olive Oil
1 cup Carrots chopped
1 cup Onion chopped
1 cup Celery diced
1 Tbs. Thyme
1 Tbs. Parsley
1 Tbs. Garlic minced
1 Bay Leaf
1 Tsp. salt
2 Tsp. Pepper
Stew:
8 oz. Bacon cut into 1” pieces
10 Carrots peeled and cut into 1” diagonal pieces
1 Lg. onion diced fine
3 Tbs. garlic minced fine
5 stalks Celery cut into 1” diagonal pieces
? Cup Cognac
1 750 ml. Red wine
2 cups Beef stock
2 tsp. Worsteshire
1 Tbs. Each Thyme & Parsley
1 Bay Leave
1 Tbs. Tomato Paste
24 oz. Mushrooms stems removed and cut ?”thick
3 Tbs. Each Flour & Butter mixed well
8 oz. Pearl onion frozen

Cook bacon until crispy and set aside. Brown Meat on all sides, remove with bacon.
Add Butter if you need more Oil.
Cook carrots, celery, onion 10 min in bacon fat.
Add Garlic and cook 3 min. more. Salt & Pepper!
Add Cognac & light to burn off liquor.
Add tomato paste and thyme, parsley, bay leave & wine.
Add meat (chuck & bacon) Cover meat with Beef stock and worsteshire.
Cook 10 min. & skim off brown foam (blood, yuck).
Simmer 2 hours or more to liking. Salt & pepper
Add butter flour mixture.
Sautee mushrooms in 2 Tbs. butter 10 min. add onions 2 min. more. Then add to stew.
Cook 15 min. more and Eat with crusty bread!

Do a Southwestern Baked Potato. While you are baking the potato first, cut the beef into match size and cook with taco seasonings. Should be moist, but not too saucy. Cut a slit in the potato and fill with meat mixture, then top with pepperjack or cheddar and bake till the cheese melts.

GRILLED HERB STEAK

3/4 c. lemon juice
1/2 c. chopped onion
1/4 c. oil
1/2 tsp. salt
1/2 tsp. celery salt
1/2 tsp. onion salt
1/2 tsp. dried thyme
1/2 tsp. dried rosemary
1/2 c. dried oregano
2 cloves garlic, crushed
3 lbs. round steak, cut into 1 1/2 inch wide strips

Combine all ingredients (except steak) in large shallow bowl. Mix well. Add meat and marinate 6-8 hours. Grill steak, turning and basting until done to your taste.
