Tasty easy dinner?!


Question: I live with my boyfriend and roomate who is also a boy, so needless to say, I do most of the cooking. (Our roomate once made instant stuffing and ground beef .. ever since then I decided to be the cook!) =D In the last month or so I've made enchiladas, lemon chicken and veggies, corned beef and cabbage, pork chops w/ mac and cheese, frozen lasagna, things like that. I get home late, so I need something easy and that the guys will like. (They aren't too picky). 10 points to best answer! Thank you!

How about a quick beef stroganoff? (Cheat version)
Fry 1/2 a large white onion in some olive oil to soften, turn up the heat and add 200g of button or chestnut mushrooms to colour a little, add 50g butter and the juice of 1/2 a lemon. Remove from the pan and set aside.
Slice some beef fillet or if you prefer sirloin or rib eye steaks into strips - enough for three people and add into a smoking hot pan with a little olive oil. Allow to colour quickly then chuck in the mix you set aside before and a level tablespoon of smoked paprika. Then add in 200ml of sour cream and heat through at a simmer for 3-5 minutes. Check the seasoning and serve with potatoes or rice or garlic bread. Whatevers easiest.

I just poted this one on a different question.. but it is so good and easy to make. Hope you like it to.

Stewed Chicken.

1 chicken, skin removed and cut into bite-sized pieces wash in lime or lemon juice

1 meduim onion finely diced
1 stalk celery
a couple cloves garlic depending on how much you like
salt a little
pepper more than a little be generous with it
lime juice a litle bit
all above for marinade
about a tablespoon -brown sugar
oil for frying
a squirt ketchup or a bout a 1/4 tinned tomatoes
dark soy sauce
coconut cream ( optional )


Season chicken with above mentioned ingredients and for a few hours before cooking.
In a heavy pot put about 2 tablesps of oil and the brown sugar and let the sugar get dark brown, but don't let it burn
Add chicken pieces and fry, save the marinade liquids, without stirring for a few minutes, until pieces look brown, then add marinate back in to the pot a little ketchup and a little dark soy for colour and continue frying for 5 mins

Add a little water and stew chicken until tender ( about one hour ).
Add a little coconut milk ( cream ) if desired about a 1/4 tin.

My partner likes it when I make him cherry glazed chicken breasts, smashed potatoes and a veggie.

Cherry glazed chicken breasts:

1 can cherry pie filling
4-6 boneless chicken breasts

Heat oven to 350 degrees F. Place the chicken breasts in a glass baking pan that has been sprayed with a non-stick cooking spray like Pam. Spoon just enough of the cherry pie filling over the chicken to cover lightly. Place pan into oven and cook for 1 hour and 15 minutes spreading more of the pie filling over the chicken every 15 minutes.

This is very easy and you get a nice moist chicken breast. This also works for Cornish game hens.

Bake a spicy chicken

Parmesan Meat Loaf

1.5 lbs ground extra lean ground beef
5 oz grated parmesan cheese
1/2 cup eggbeaters OR two eggs
2 Tbsp parsley
1/2 tsp black pepper
1 clove garlic, chopped
1 chopped onion

Mix together. Form into loaf. Bake 375 degrees 30-45 minutes

I had this idea when my sister and I went to the beach and needed something quick to eat. Play around with this recipe and use other things you think you would like. It's pretty adaptable.

I don't use specific measurements/ingredients in my cooking. I just go with what looks good to me at the time.

I cook some macaroni and frozen corn and set it aside.

For the cheese sauce, I heat milk(not to boiling) and mix American sliced cheese in to it. Stir. If you turn the heat up, watch that the cheese doesn't burn or the milk doesn't get too hot. I put a salt free spice(garlic and herb)in it, some onion or onion and herb spice. Stir until thickened. I use a whole or half cap full of the spices.

Then I add the macaroni to the sauce. If needed, I put more or different types of cheese in.

Next, I mix some low-fat mayonnaise with tuna(water packed) and put the mixture in the macaroni mixture. Add some butter and salt. Anytime the cheese sauce gets too thick, add more milk or water.
I use non-fat dry milk, but any kind will do.
