Without doubt, this dish - Mexican comfort food - is my favorite. Easy to make, great mix of flavors and textures. Seriously, give it a try.
Tinga
Ingredients
1 lb boneless, skinless chicken breast - cooked and shredded
1 lb pork loin, cooked and shredded
2 large white onions, finely chopped
5 large tomatoes, 4 cut into 1/4-inch dice
1 large carrot, cut into 1/4-inch dice
1 large potato, cut into 1/4-inch dice
3-5 canned chipotle peppers in adobo sauce (to taste)
1 (8 oz) can corn (optional)
1 tbsp minced garlic
1 tsp salt (more to taste)
2 tbsp olive oil
16 oz sour cream
20 tostada shells
Directions
In a small saucepan, boil diced carrot and potato until tender (about 10 minutes). Quarter one tomato and put in blender; add chipotle peppers, garlic and salt - process until smooth.
In large skillet, saute chopped onion in olive oil until translucent. Add cooked chicken and pork dices to onion. Add cooked carrot and potato dices. Add 4 diced tomatoes and corn (if using). Add chipotle puree. Stior to blend well and continue heating until warmed through.
To serve - spread 1 tbsp sour cream on top of tostada shell. Add 2 tbsp tinga mixtrure evenly over sour cream. Salt to taste.

1 pack of mushrooms sliced
5 pieces of chicken skinless
1 large can of tomatoes
1 tablespoon of minced garlic
salt and pepper
cook on high for 6 hours
or low for 8 hours
serve over rice or noodles

home made alfrado wiht peas and ham....... woo its good, all you do is saute garlic in oil and butter. then add in cre wait for it to il. then shread in fresh parmesean cheese untill its cheeest enough. yummmmmmmmmmm
Braciole (bra-coal-la) Is my favorite recipe. Its an Itilian recipe meaning (meat rolls)
1lb top round cut beef
1tbsp rubbed sage
salt pepper
3/4 cup of pine nuts
1/2 cup dried cranberries
1 cup grated parmasean cheese
2 15oz cans tomato sauce
1 8oz can tomato paste
3/4 + 1/2 cup red wine
1 tbsp basil
1 tbsp oregano
Rub the sage, salt, and pepper on to the rolls of meat
sprinkle the cheese, pine nuts, and cranberries onto it. roll it up and stick a few tooth picks in it to hold it together. Put it in a skillit with the 3/4 cup of wine and turn every few minutes until it is cooked all the way through. IN the meantime in a medium sized sauce pan over medium heat cook the tomato sauce, paste, wine, basil and oregano stir occasionally until the meat is done then serve the sauce over it.
Tripe & Onions
Wash tripe thoroughly and place in pot and bring to a boil. (5-10minutes)
Drain and return to pot with more water and return to the boil.
Simmer gently for about 30 minutes.
In a frying pan soften onions and make an onion sauce.
Drain tripe and cut into bite sized pieces and return to pot.
Add sauce and stir until the tripe is hot.
Stir in a handful of finely chopped parsley and serve.
I would just have a mountain of mashed potato to go with it.
I like simple, down home cooking. I would have to say that my favorite right now is this simple macaroni & cheese that my mother in law made at Thanksgiving time. It was 2- 16 oz boxes of elbow macaroni, cooked and drained. Melt down a block of velveeta cheese. Saute chopped onions, green peppers and mushrooms. Mix all together. Pour in casserole dish and top with shredded cheddar cheese. Bake long enough to melt. It was awesome! ;)
