Quick! I need an easy white sauce recipe. Can anyone help me out?!


Question: White Sauce

1/3 cup butter or margarine
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground white or black pepper
1 (12-ounce) can evaporated Milk
3/4 cup water
Melt butter in small saucepan. Stir in flour, salt and pepper. Gradually add evaporated milk and water. Cook over medium heat, stirring constantly, until mixture comes just to a boil.

Makes 3 cups.



Herb Sauce: Prepare 1 cup White Sauce, adding 1 clove finely chopped garlic to butter. Add 1/4 teaspoon dried oregano, basil or sage to flour mixture. Proceed as above. Makes 1 cup.

Cheese Sauce: Prepare 1 cup White Sauce, decreasing butter and all-purpose flour to 1 tablespoon each and the water to 1/3 cup. Eliminate the salt. Proceed as above. Stir in 1 cup (4 oz.) shredded or cubed processed cheese product until melted. Makes about 1 1/2 cups.

Cheddar Cheese Sauce: Prepare 1 cup White Sauce, decreasing butter and all-purpose flour to 1 tablespoon each and the water to 1/3 cup. Proceed as above. Stir in 1 cup (4 oz.) shredded cheddar cheese until melted. Makes about 1 1/2 cups.

INGREDIENTS
2 cups heavy cream
1/2 cup all-purpose flour
1 lemon, juiced

Melt butter in a sauce pan and whisk in flour and salt until smooth. Gradually stir in cold milk, cooking over direct heat and stirring constantly until sauce boils; reduce heat slightly and continue to stir until sauce becomes smooth and thick. When sauce thickens, simmer for an additional 10 minutes over very low heat, stirring occasionally.
Stir carefully to avoid lumps. If sauce becomes lumpy, use a stick blender or rotary beater to blend out lumps or else press through a sieve. Wondra flour may be used to great advantage since this flour does not have a tendency to lump.

I make white sauce without canned milk-i use regualr milk
1/2 cup flour
1 stick margerine
1-2 cups milk depending how thick you want it
salt/ pepper to taste

melt margerine add flour cook 1 minute wire whisk milk in so that you have no lumps and add salt/pepper

double it if you need more

DIRECTIONS
In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. Add more milk depending on desired consistency.

White Sauce

Stir often until thick and creamy. Add a little salt and pepper and anything else you'd like. Cheese is good.

In a small, heavy saucepan, melt 2 tablespoons of butter over low heat.
Blend 2 tablespoons of flour into the melted butter.
Add 1/4 teaspoon of salt.
Cook over low heat, stirring, for 4 to 5 minutes. Cooking for this length of time will minimize 'flour' taste.
Slowly add 1 cup of milk, stirring constantly.
Continue cooking slowly until smooth and thickened.
For thin white sauce, follow the instructions above, but use 1 tablespoon of butter and 1 tablespoon of flour. Thin white sauce is used in cream soups.
For thick white sauce, follow the instructions above, but use 3 tablespoons of butter and 3 tablespoons of flour. Thick white sauce is used in soufflés.
For heavy white sauce, follow the instructions above, but use 4 tablespoons of butter and 4 tablespoons of flour. Heavy white sauce is used as a binder for croquettes.

Tasty White Sauce (quick and easy)

Ingredients
2 cups milk(low fat or non-fat milk works fine)
100 g butter or margarine, chopped into small pieces
1/2 cup plain flour
1/2 teaspoon salt(or to taste)
1/4 teaspoon black pepper(or to taste)

Directions
1 Pour milk into a saucepan.
2 Add all other ingredients.
3 Place pan over a medium heat, and, using a wire balloon whisk, whisk sauce constantly until butter melts.
4 Be sure to work the whisk into the edges of the pan to incorporate all the flour.
5 Whisk frequently until the mixture comes to a boil.
6 Reduce heat to low and simmer for about 5 minutes, stirring occasionally, until the sauce reaches the desired consistency.
7 Taste and add extra seasoning if required.
8 Variations: Mustard Sauce Make sauce as per recipe, but use 1 ? cups milk and ? cup chicken stock.
9 Along with the salt, add 2 teaspoons mustard powder, ? teaspoon onion powder and substitute a good pinch of cayenne pepper for the black pepper.
10 Stir in 1 teaspoon lemon juice when sauce is completed.
11 Cheese Sauce Make sauce as per recipe, but use 1 cup milk and 1 cup cream.
12 Along with the salt, add a good pinch of nutmeg and substitute a good pinch of cayenne pepper for black pepper.
13 At the simmering stage stir in 75g- 100g grated tasty cheese (I like a mixture of mature cheddar and parmesan).
14 Stir in 1 teaspoon lemon juice when sauce is completed.
15 Parsley Sauce Make sauce as per recipe, but use 1 ? cups milk and ? cup cream.
16 When sauce is finished, mix in 4 tablespoons finely chopped parsley and 1 teaspoon lemon juice.

Variation: To make a tasty meal add eggs to this and drizzle over salmon fillets. Delicious!

Of course, this is NOT a classic white sauce, but for an "on the fly" type of deal, this has worked best for me. One part milk to 2 parts heavy cream. On a Medium heat, let this slowly come to just before the boiling point, turn down your heat, then start whisking in some Parmesan Cheese, the powdered kind works here to aid in the thickening process. Once your sauce has reduced and thickened, I always add a little garlic and white pepper. The salt is already in your Parmesan, so I wouldn't suggest adding any more. So, that's it, hope this helps!

White Sauce
1 T butter
1 cup milk
2T corn-starch or
2T flour
? teaspoon salt
1/8 teaspoon white pepper

Melt butter in a saucepan.
Stir in cornstarch and flour to make a paste.
Keep on medium heat.
Add milk gradually while whisking (or stirring constantly.)
Bring to the boil (for about 2 minutes) or until sauce is thickened.
Add spices (and any other spices you want like parsley, oregano, etc. for a different taste.)

For thinner sauce add more milk.
For thicker sauce, add more cornstarch.

If you don't have cornstarch, substitute flour, but the product is gummier.
If you want, you can eliminate the flour and use 4T cornstarch.
No butter? No problem. Margarine is fine. Oil is fine. Sour cream is fine.

It's so easy and versatile.

4 tb Butter
4 tb Flour
1 c Milk
1 c Cream
1 ts Salt

Instructions:
Make white sauce by melting butter and mixing in flour, working to a
smooth paste. Add milk, a small amount at first, and mix to a creamy
paste. Add remaining milk and cream and salt, cooking over low heat
until thickened. Serves approximately 6.
