Question: having duck breast for tea but dont no what ind of sauce to do

a lovely orange & raspberry sauce for your duck

I like a more earthy sauce like wild mushroom Demiglace with a truffle oil drizzle

Rasberry glace

Sauce for Duck
1 cup chicken stock
1/2 cup white wine
1/2 cup orange juice
1/2 cup dates, pitted and chopped
1/2 cup coarsely chopped prunes
1/4 teaspoon ground mace
1/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon white sugar
2 tablespoons red wine vinegar

DIRECTIONS
In a saucepan over medium-high heat, combine the stock, wine and orange juice. Bring to a boil and add the dates and prunes. Allow fruit to partially dissolve.
Reduce heat, add mace, cinnamon, ginger, sugar and vinegar. Cook for another 5 minutes; remove from heat and allow to cool. Puree in a blender or food processor until smooth.
Pour over duck while roasting or serve on the side.

With duck it's got to be plum or hoi sin sauce. xxx

RED DUCK SAUCE

* 1 (1 lb) strawberries and raspberries in heavy syrup (make syrup slice them with sugar,lemon (1/2 a lemon) and orange juice (1/2cup) , let them sit in fridge for about three hours...
* 1/2 tsp minced ginger root

In a 1 or 2 qt pot, Strawberries and raspberries with their syrup. Remove all green heads. Stir in lemon juice and ginger root. Bring to a boil. Using a spoon cut them into small pieces as they cook. Cook for about 5 minutes to boil down the liquid a bit, stirring to prevent sticking. Transfer the cooked fruit to a bowl or container. Let cool. Cover and refrigerate. The sauce will keep for several days in fridge or can be frozen.

I love serving sauted duck breast over fresh greens drizzled with a sweet/savory sauce.

Hopefully you have shallots or scallions. After the breasts are cooked, pou roff the excess fat, add a pat of butter, saute a couple of TBSP of minced shallots in the fat, deglaze with the orange juice, reduce by half, add a few drops of vinegar (balsamic or fruit vinegar if you have it), thyme, some bisto, and seasoning (salt, pepper). Taste carefully and adjust the sugar, acid and seasoning as required. Just before serving add the raspberries or not.

Bin the bisto........Then put the OJ in a pan and bring to simmering point add a little black pepper and salt an reduce by half
Chop the strawberries into 4 and put into the OJ with the rasps and a tablespoon of sugar if u can lay your hands on a drop of brandy then put the duck breast side down into a drop of hot oil in a fry pan and pour the brandy over then set light to it .When the duck is cooked remove from the pan and add the fruity sauce and simmer for a few mins
Slice the duck and pour over your sauce

Chinese Duck Sauce Recipe
Ingredients
1 one:
1 lb plums halved and pitted
1 lb apricots halved and pitted
1 1/4 cup cider vinegar
3/4 cup water
1 two:
1 cup cider vinegar
1 cup firmly packed brown sugar
1 cup white sugar
1/2 cup lemon juice
1 three:
1/4 cup chopped ginger
1 small onion sliced
1 (or more) serrano, seeded and chopp, ed
2 small garlic cloves sliced
4 tsp salt
1 tbsp mustard seed toasted
1 cinnamon stick


Directions

Combine first set of ingredients and cook over moderate heat for 5
minutes. Reduce heat and simmer uncovered for 15 minutes. Combine
second set of ingredients and boil for 10 minutes. Combine the above
three sets of ingredients and simmer for 45 minutes. Remove cinnamon.
Puree in food processor. Return to kettle and simmer until thick.
Transfer to sterilized mason jar, cap loosely and let cool. Tighten
caps and let stand in dark at least 2 weeks. Makes 2 pints.
