Have them with cooked pasta and a nice tomato sauce with balsamic vinegar and a big pinch of dry basil. Serve in a hot bowl with a nice piece of bread or a side salad.

marinate and grill

use some soy sauce and olive oil with fresh parsley, garlic and basil as your marinade with a dash of hot sauce and lemon. Marinate for 30 minutes, put them on skewers or on a George Foreman grill with some onions and baste with the marinade. Cook for 4 minutes on each side or until firm and pink. Serve with some grilled veggies or a nice rice pilaf. Try some grilled fruit on the side for dessert with some cool whip. The best to grill are stone fruits and pineapple. Then drizzle with a little honey and lemon. Yummy!!

Prawns wrapped in pasta

Serves 4



Preparation time 1-2 hours

Cooking time 10 to 30 mins






Ingredients
4 large prawns
8 anchovy fillets
salt
olive oil for frying
For the pasta
200g/7oz 00 flour
2 eggs
Or use shop bought, fresh, tagliatelle
For the pesto
100g/3?oz fresh basil leaves
1 garlic clove
200ml/7fl oz olive oil
1 tbsp pine kernels
3 tbsp parmesan cheese, grated
salt



Method
1. First make the pasta. Mix the flour and eggs together until you get a dough.
2. Knead for about five minutes, then wrap in cling film and place in the fridge for about an hour.
3. Roll out the pasta in a thin sheet, approx. 1 mm in thickness.
4. Dust the sheet of pasta with some flour and carefully roll it up loosely. With a sharp knife, slice into ribbons like tagliatelle.
5. Set aside and cover with cling film so the pasta does not dry out.
6. To make the pesto, place all the ingredients in a mixer and whiz until you get a smooth consistency. Set aside.
7. Take the prawns, remove the shells leaving the head and tail, and with a sharp knife make an incision in the spine and remove the black line.
8. Fill with two anchovy fillets and close. Take a handful of pasta ribbons and wrap around the prawn from head to tail.
9. Heat abundant oil in a fryer or deep pan and deep-fry the prawns for a couple of minutes.
10. Remove and drain on kitchen paper and season with salt.
11. Place some pesto sauce on a plate and place a prawn on top and serve immediately.

Zesty Garlic Prawns

Ingredients

# 2 lbs large raw tiger shrimp, in their shells, thawed if frozen
# 1/2 cup butter
# 1 tablespoon vegetable oil
# 6 garlic cloves, smashed
# 2 limes, juice and zest of
# 1 bunch fresh coriander, chopped
# warm tortillas, to serve
# lemon slices, for the finger bowls

Directions

1.Rinse the prawns in a colander, remove their heads and leave them to drain.
2.Heat the butter and oil in a large frying pan, add the garlic and fry over a low heat for 2 to 3 minutes (Cook the prawns in a large frying pan or cast iron flamproof dish that can be taken directly to the table, so that they retain their heat until they are served).
3.Add the lime rind and juice.
4.Cook, stirring constantly, for 1 minute more.
5.Add the prawns and cook them for 2 to 3 minutes until they turn pink.
6.Remove them from the heat, sprinkle with coriander and serve with the warm tortillas.
7.Give each guest a finger bowl filled with water and a slice of lemon, for cleaning their fingers after shelling the prawns, and provide lots of paper napkins!


Coconut Prawns

Ingredients

# 24 prawns or large shrimp
# 1/4 cup flour
# 1/2 teaspoon salt
# 1/2 teaspoon sugar
# 2 eggs
# 2 teaspoons milk
# 2-4 dashes hot sauce
# 2 cups shredded coconut
# 2/3 cup peanut oil

Directions

1.Shell and devein and butterfly prawns-leave the tail if possible.
2.In a bowl beat together the eggs, milk and hot sauce.
3.Combine flour, salt and sugar on a seperate plate and put the coconut in a bowl.
4.Dip each prawn in: flour mixture first.
5.egg mixture second.
6.Coconut third.
7.At this point they can be placed on waxed paper and refrigerated until ready to cook.
8.OR Heat oil in a large skillet over medium high heat, and fry to golden on each side.
9.Serve with warmed jalape?o pepper jelly or cocktail sauce.

I had coconut prawns the other day and they were absolutely outstanding! Definitely something the entire family will enjoy!

COCONUT PRAWNS
24 prawns

2 cups shredded sweetened coconut
2/3 cup peanut oil

Combine flour, salt and sugar on a seperate plate and put the coconut in a bowl. Dip each prawn in: flour mixture, egg and then the coconut. Heat oil in a large skillet over medium high heat, and fry to golden on each side. Serve with warmed jalapeno pepper jelly or cocktail sauce.

This is very simple, quick, easy and delicious too. Simply cook spaghetti and stir through salsa and prawns!

i cook this as an alternative to bolognese, fry some mushs and garlic in oliveoil add cooked prawns stir in tomato puree add passatta and stir in some sour cream serve with tagliatelli.

Simplicity is best, make a nice salad, smother with fresh prawns, butter some wholemeal bread, pour out a chilled glass of your favourite white wine and devour all with relish....no not that sort of relish.
