Pork stew meat?!
Answers: I have some pork stew meat. My husband is prediabetic. I have been trying to fix food more healthy. My husband's Doctor says to stay away from rice and noodles. I would like to know how to make something healthy for my family with this. Can someone give me suggestion?
It is good that you are getting information and recipes to help your hubby in his pre-diabetic condition. Good for you!
You can have rice, but make it BROWN rice and there are all sorts of noodles and pastas out there now that are low-carb or even made from other "flours" besides white flour (ie: artichoke flour pasta and whole wheat pasta just to name 2). There is a new brand of pasta that I now use called DREAMFIELDS which is low carb and it is delicious!! I get it in the regular grocery stores.
Try to stay away from ANY artificial sweeteners if possible--they are finding out that MOST of them are just unhealthy for ANYONE, even those of us who have diabetes. Sorbitol is actually a laxative (!) and can be nasty.
Red bliss potatoes are lower in starch (and carbs) than "regular" potatoes so you can boil some of those up and season with herbs and REAL butter (not margarine).
It might be a good idea to consult someone in a health food store about what to prepare because MOST doctors do NOT have extensive training in nutrition and are not much help. That has been the experience of most of the people I have spoken with about this.
Basically, stay away from any food that is white in color: refined sugar, white bread, white noodles, white rice...you get the idea.
Salads, and lots of them, are great with a meal and if you make up a dressing of apple cider vinegar, olive oil (or walnut oil, or grape seed oil), and herbs the vinegar actually helps to dramatically lower the blood sugar! You can even toss in a few pieces of fresh fruit in the same salad (apples, grapes...) and it tastes super.
There is all sorts of nutritional information on the Internet and in your local health food store that can help you with this new challenge and there is so much more that can be done for pre-diabetes and type 2 diabetes than in the past.

My husband is diabetic too, and I found that putting some tofu into things lowers his blood sugar! Weird, but sometimes as much as 30 after he eats! The silken can be mashed smooth and put a little into things like spagetti sauce, soup, stew. You won't even taste it, and it'll act as a thickener. Instead of noodles, you can use Spagetti Squash! ... I substituted cauliflower for potatoes too. You can mash cauliflower and season like mashed potatoes; or cook al dente and use in place of potatoes in potato salad. ... You want to stay away from carbs because they will raise his blood sugar:) ... Actually, just cook like you always did, but make a few substitutions. Substitute Splenda for sugar in just about anything ... My hubby lost 75 lbs. in a year, just from cutting out sugar & watching carbs! Now, he isn't even on medication! ... Keep him happy with sugar-free jello & pudding snacks; sugar-free popsicles. Lite Cool Whip on things ... You might want to cut out MILK, since it has 13 g SUGAR in a glass! (how strange) ... and be careful with sugar-free chocolate! Too much acts as a laxative .... We have a green salad and fruit salad with each dinner. Fresh fruit doesn't seem to react badly for him .....
