i love shredded coconut in cakes!

just make a normal sponge mixture of for little fairy cakes, and when it's made, just add the shredded coconut to the mixture and voila!

its really nice!

You could also try putting it in a Korma? I think that may be quite nice, though i've never tried it!

yeh make some rice pudding and add it in, get a pack of pudding rice or flaked rice, follow the recipe and add as much coconut as you like....yummmy

Uh, frosting for german choc cake? How about making "haystacks" candy?

This is SUPER easy and VERY yummy!

Coco-Nut Caramel Chews

5 ounces soft caramel candies, 24 pieces, unwrapped
1/2 cup unsalted dry roasted peanuts
1/4 cup white chocolate chip morsels, 2 handfuls
1 1/4 cups sweetened coconut flakes
Vegetable cooking spray

Line a 8 by 8-inch square microwave safe dish with plastic wrap allowing the
wrap to come over the sides. Spray the prepared dish with cooking spray.

Spray a medium size, microwave safe bowl with cooking spray. To the prepared bowl, add the caramel candies, peanuts, white chocolate and 1/2 cup of the coconut. Give it a stir to combine. set the microwave for 1 minute 30 seconds on HIGH. Place the bowl in the microwave and cook 1 minute. Stop the microwave, stir the mixture, return to microwave to cook 30 seconds longer. Remove the mixture and stir. Scrape it into the prepared square pan. Flatten the mixture with a rubber spatula evenly. Cover the top of the candy with remaining coconut, using the rubber spatula to press it in slightly. If the mixture is too firm on top for the coconut to stick, place the mixture back in the microwave for 10 seconds, then resume pressing the coconut into the candy.

Allow the candies to cool completely. Remove the entire block, using the plastic wrap to help you pull it out. Using a sharp knife, cut candy into small, 1-inch squares.

Coconut cream pie, meringues, cookies, the web has a million recipes for coconut.

coconut cookies
3oz marg
5 oz Self Raising flour
3 eggs
5oz shredded coconut
1 oz of sugar
1 container of glace cherries
mix up the marg with the sugar then add the flour and shredded coconut cook them up in paper cake cups add glace cherry on top.
cook in oven 200f for 30 minutes

Are you sure it's shredded and not desiccated? Either way, I make a big bowl of reasonably thick custard and mix in the coconut until it's stiff, mmmmmmmmmmm. OR make some little fairy cakes with almond essence in them, white icing on the top and press into the coconut. Have fun :>) Desicated coconut may also be added to your chicken curry.

Here's a simple recipe called chocolate mounds:
1 cup coconut flakes
1/2 cup nuts (optional)
1 bag of semi-sweet morsels or 1 bag of white chocolate chips
1.) toast the coconut flakes and nuts for about 2-3 min. at 200 degrees
2.) While that's toasting melt the chocolates in a bowl, and once melted let cool for 10 min.
3.) After cooling, place toasted nuts and coconut flakes in the melted chocolate and mix
4.) Then shape them into mounds and place in the fridge
5.) Once cool enjoy eating them!
This was all from memory so I don't know if the measurements are correct, but the measurements really don't make a difference. Just add the amount of ingredients according to what you prefer. (White chocolate is much sweeter than the semi-sweet, so if you have a really sweet tooth use the white chocolate.)

COCONUT CAKE DELUXE

1 3/4 c. sugar
2 eggs
1 1/2 tsp. vanilla
1/4 tsp. coconut flavoring
3 c. sifted cake flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/4 c. milk
1/3 c. plus
3 tbsp. coconut

Cream butter; add sugar gradually, creaming until light. Add eggs, vanilla and coconut flavoring; beat until fluffy.
Sift together flour, baking powder and salt; add dry ingredients to creamed mixture alternately with milk, beating after each addition. Beat 1 minute. Stir coconut into batter. Pour batter into two greased and lightly floured 9 x 1 1/2 inch round cake pans. Bake at 350 degrees for 30 to 35 minutes. Cool 10 minutes, then remove from pans and continue cooling. Makes 12-16 servings.


GOLDEN BUTTER FROSTING:

1/2 c. (1 stick) butter, softened
1 egg yolk
2 tbsp. buttermilk or milk
1/2 tsp. vanilla
3 c. sifted confectioners' sugar
Coconut (for top and sides of frosted cake)

Place first 5 ingredients in small mixing bowl in order listed. Blend together with electric mixer, beating at medium speed for 3 minutes. If frosting is too soft, beat in a little extra sifted confectioners' sugar to obtain desired spreading consistency.
Spread frosting on cooled cake, then sprinkle frosted cake with coconut. Frosts tops and sides of two 8 or 9-inch layers, or top of a 9x13 inch cake.


********I would skip the flavoring, but you can do whatever floats your boat :)

Biscotti is an Italian cookie that is baked twice to make it crisp.

Coconut Biscotti

1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/8 teaspoon nutmeg
3/4 cup sugar
1 teaspoon vanilla
2 large eggs
1 cup coconut flakes

Preheat oven to 300.

In a medium bowl, combine flour, baking powder, salt, baking soda, and nutmeg until well mixed.

In a separate medium bowl, combine sugar, vanilla, and eggs. Beat until smooth and creamy. Add coconut flakes, and stir until evenly distributed.

Add the dry ingredients to the egg mixture, mixing well.

Heavily flour a board, and turn out biscotti dough, kneading 7-8 times.

Using a rolling pin, roll dough out to a 15x3 rectangle; patting down to 1 inch high.

Set dough onto cookie sheet [protect with parchment paper]. Bake 40 minutes.

Set aside for 5 minutes to cool slightly.

Slice biscotti into 1/2 inch logs. Place on one side and bake an additional 20 minutes, turning each log over half way through.

Cool completely. For presentation, dip into vanilla glaze, then into extra coconut flakes.

For Almond Joy Biscotti- Add 2 Tblsp. finely ground almonds with the coconut. Dip cooled biscotti into melted chocolate with a touch of almond extract or amaretto, then into coconut flakes.

Who says it's gotta be dessert? I keep shredded coconut in my cabinet just for shrimp and chicken. Beat an egg with about 1 tbsp milk. Place chicken pieces in flour then egg mixture then roll in coconut. You can either bake in oven or fry in deep fryer. Either way, this is a delicious recipe!

chocolate maccaroons, i make these all the time and my kids love them

1/2 cup milk
1/2 cup coconut
3 cups rolled oats (quick cooking)
1/2 cup butter
2 cups sugar
1 tsp vanilla
5 tbsp cocoa
wax paper for setting

mix in a sauce pan and bring to a boil for one minute
milk, butter and sugar
remove from heat and add vanilla
mix dry ingredients in a seperate bowl
pour the milk mixture over the dry mixture and mix well
put wax paper out on a table
drop by teaspoon onto the wax paper and let them set
i always double this recipe to make more

Moist Coconut Pie

4 eggs
125 g softened butter
1/2 cup plain flour
1/2 cup milk
1 cup castor sugar
1 cup shredded coconut
400 ml can coconut milk

Blend or process all ingredients until smooth.
Pour into greased pie plate, bake in moderate oven 1 hour.
Cool to room temperature, turn onto serving plate.
If desired, decorate with whipped cream, glace cherries and toasted coconut.

Put the pie in the fridge for few hours.
Serve it cold with strawberry sauce.

Gainsborough Tart

Shortcrust Pastry base spread with red jam:-

10oz Coconut
4 1/2oz Butter
6oz Caster Sugar
1/4oz Baking Powder
2 1/2fl. oz Milk
1 Egg
1 teas Lemon or Vanilla Essence

Beat all ingredients together and spread over jammed base
Bake Gas 4 for 40 mins

Bounty bars or the chocolate snow balls filled with cream and covered in coconut.

Original macaroons dipped in chocolate

1 can condensed milk
20 saltine crackers
1 - 1 1/2 cup shredded coconut
1 cup milk chocolate chips

crumble crackers in a mixing bowl then add condensed milk, and coconut..

bake at 350 for about 10-15 minutes just keep eye on until browned a lil bit.

Melt chocolate chips in microwave safe bowl then dip half of macaroon in chocolate... yuuum

Tropical Pinapple pie

1 graham cracker crust
1 container cool whip thawed
1 can condensed milk
1 can crushed pinapple
1/2 cup shredded coconut


in a mixing bown add cool whip, condensed milk, and drained crushed pinapple. once mixed together add in pie crust... sprinkle coconut on top and chill for a few hours

Tropical Chicken Salad Ingredients
2 c Chicken, white meat, *
2 x Apples, peeled and diced
1 c Pineapple Chunks
1/3 c Chopped almonds
1/2 c Shredded Coconut
1/4 c White Raisins (opt.)
3 tb Chopped Chutney
2 ts Curry Powder
3/4 c Mayonnaise

Instructions for Tropical Chicken Salad
* Cooked and cubed In a bowl, combine chutney, curry, and mayonnaise. Combine all other ingredients in a separate bowl. Stir curry, chutney, and mayonaisse mixture into the chicken mixture. Serve on watercress or lettuce leaves, with slices of avocado

Bakewell tart is really interesting look up a recipe it sort of goes upside down when it cooks - blows oyur mind but it needs coconut in the custard bit

KORMA!! :D

Make a lovely Korma.
Get Indian spices or ready made korma paste
Fry the chicken with an onion till brown
Add spice/paste and coconut
mix it all in and simmer for a bit.
When its all hot and got the desired consistency add a bit of cream to get the preffered taste.

It is lovely served with rice
