you can take any recipe you enjoy and change it up to make it better. here are some things I have done to change a recipe.
1. Add more veg than it calls for and less meat.
2.Skip about half of any fat/oil/butter in any recipe(cooking only, not baking, Baking works different)
3. you can skip most of the salt in most recipes too.
4. Make sure any meat you use is as lean as possible.
5. Bake or broil or grill as much as possible instead of pan frying and when you do pan fry, use the least amount of fat possible.
6. Switch to whole grain pasta, brown rice, use barley or Bulgar wheat instead of rice or pasta. some of these changes make a really cool new flavor and texture to dishes.( example,replace 1/2 half the ground beef in a chili recipe with kasha)
Once you start making those changes, it becomes a challenge and kind of fun to see how much you can reduce and still have great flavor. Some recipes automatically have you sauteing everything in oil before adding other things. Skip that part and you eliminate the added oil and sacrifice very little flavor. most recipes call for too much salt in the first place. When ever I make a hot dish with ground beef and pasta, I add tons of peppers, onion celery and garlic and drop the meat amount by a 3rd. no one in my family really noticed.

grilled chicken breast with steamed veges and boiled potatoes with some sort of gravy/creamy sauce
beef casserole with beef chunks, onions, garlic, herbs, potato cubes, peas and corn and a can of crushed tomatoes and 1-2 cups of gravy (made up) stew and serve with rice or crusty bread mmmm
grilled or bbq'd fish in alfoil with a slice of white onion and tomato and lemon salt n pepper, serve with salad with dressing and bread
apricot chicken - chicken thighsor breast halved (bigger than bite sized pieces) in a pot with 1 pk french onion soup powder mix and 800ml can of apricot nectar add onion and chopped potato and corn, simmer untill all cooked and tender and serve with rice or crusty bread
