What is a simple and quick idea for dinner?!

Question: A couple of healthy, tasty ideas:

Quick Chicken in Wine Sauce...
Take boneless breasts and pound them until they are about 1/4 inch thin.
Then, just lightly flour the breasts and sautee with some garlic in a tablespoon of butter and 2 tablespoons of olive oil. Leaving the chicken in the pan, add 1/4 wine (any type is fine, I usually use marsala) and 3/4 water.
This should thicken and you can add other seasonings to taste. I just add a dash of salt and fresh mushrooms & spinach to be a bit adventuresome. Cover pan and simmer for about 10 to 15 minutes. Depending on how thick you'd like your sauce, you may add more water. Serve with any type of rice or noodles and a side salad. (Prepare this while chicken is simmering.)
Fast, delish, and it tastes like you spent HOURS in the kitchen.

Quick & Tasty Salmon...
Important: Because it is usually over an inch thick, cut into serving-sized fillets; otherwise, it will not cook thoroughly! (You can use any type of fish fillet; tilapia is good, too!)
In a flat, casserole dish, lay the fillets and drizzle 1/2 c. of orange juice. (Pineapple Orange is the best!)
Place a small pat of butter on each fillet, sprinkle a dash of pepper, cover with plastic wrap, and steam in the micro at high for about 3 minutes. Let stand for 1 minute and microwave for another 3 minutes.

Bon appetit!
