I can't stand veggies?!
Answers: I absolutely cannot stand many veggies. I really need to start eating more but I just can't bring myself to it. Everyone says I need to try and find different veggies and prepare them in different ways, that they will grow on me. Can anyone give me some recipes for preparing vegetables that are healthy and different? All I ever really do is a salad, carrots as a snack, and if I am feeling different I will steam some and put it in soy sauce (which turns out not so healthy, as it is loaded with sodium). At my work (an italian place) we make things such as pasta with asparagus cream sauce, and it's really great! Any different kind of ideas (not neccesarily pasta sauce) like these would be very appreciated
If you grate carrots finely, you can put them into pasta sauce, stew, chili, etc. You won't really taste the carrots, but it'll add a sweetness (to counteract the acid in the tomatoes) and act as a thickener. You can mash cooked cauliflower and put it into mashed potatoes; it actually tastes pretty similar made that way .... Oprah had a book that had all kinds of recipes to get kids to eat veggies. I think Jerry Seinfeld's wife wrote it, and it was (maybe) called "Deceptively Delicious". My daughter made brownies with spinach in it, and no one could taste it! There were alot of dessert recipes in there too....

i'm italian though and used to different ways of cooking.
Garlic Green Beans
4 garlic cloves, minced
3 tablespoons olive oil
2 pounds fresh green beans, trimmed
1/2 cup chicken broth
1 teaspoon sugar
1 1/4 teaspoons salt
1/4 teaspoon pepper
Sauté garlic in hot oil in a large skillet over medium-high heat; add beans, tossing to coat.
Add broth and remaining ingredients. Cover, reduce heat, and simmer 10 minutes or until green beans are crisp-tender.
Yield: 4 to 6 servings
You could try steaming broccoli and throwing some low fat cheese on it, let it melt...alot of people like that.
Cut up some cauliflower let it cook for about 20 mins in chicken stock (broth) and then mash...yummy.
Use sliced and cut up veggies with hummus. That is always good.
you can throw broccoli into any pasta dish!
also when you have a potato next time eat the skin! its very good for you, just make sure the chef has cleaned it well.

Avocado on French Toast
Per person you will require:
1 slice of bread
1 small egg (beaten and seasoned)
1/2 an avocado (skinned and mashed)
1 small tomato (thinly sliced)
6 thin slices of cucumber
2 or 3 roughly torn fresh basil leaves
Salt/freshly ground black pepper
Olive oil for frying
Add a little olive oil to a non-stick pan and bring up to a medium to high heat. Draw the bread carefully through the beaten egg to coat it completely on both sides but avoid breaking it. Fry it for 3 to 4 minutes on each side.
It is possible to mash the avocado straight on to the toast but I prefer to do it beforehand in a small bowl. Spread it carefully over the toast, add the cucumber slices and the tomato and season. Finish with a scattering of torn basil leaves and an optional drizzle of extra virgin olive oil.

Just try and be real
I love chopping up all sorts of fresh veggies in bite size pieces- carrots, potatoes, sweet potatoes, broccoli, onions, yellow bell peppers, rutabagas, mushrooms, etc.
Preheat oven to 350. Toss all veggies in about one tablespoon of olive oil. I love to sprinkle Cavendar's low-sodium Greek seasoning over the top. Any seasoning will do, even simple salt and pepper. Bake for 30 min. Take out of oven and give veggies a quick toss. Bake for another 15-30 minutes or until the vegetables reach your desired tenderness. Once out you could eat just as is or add Parmesan cheese or even dip in ranch dressing. So GOOD and EASY!!
