Shrimp are excellent as kabobs but take only a few minutes to cook if using raw shrimp-so if making them keep in mind whatever you skewer on with them wont cook well.

Chicken,beef and lamb make great kabobs-just cut the meat the same size so it will all be done at the same time and "doneness"

You can marinate the meat,Italian salad dressing will do in a pinch,the longer the better.Soak the skewers if wooden and thread on the meat,onion chunks,peppers,egg plant--pretty much whatever you want,veggie wise.Tomatoes are a bit iffy but cherry tomatoes will work.

Grill or broil until done and serve with some pita style bread and maybe some humus---and enjoy

I wouldn't put shrimp on a kabob, I don't think it would hold up terribly well. I would use good beef instead. That sounds good...can I come for dinner :D

Were you planning to put all those ingredients on one stick? If yes, put the shrimp on a separate stick. Seafood doesn't take that long to cook. If you cook it with the chicken, it will be too well-done and it'll be chewy and dry.

I like to marinade shrimp in garlic, pineapple and Balsamic vinaigrette for an hour. Then I stick them on skewers with bell pepper, tomato and mushrooms (you can marinade the mushrooms too). Throw them on the BBQ for a few minutes and you have a great appetizer
