Food Coloring.
Just put green food colouring in your beaten eggs and scramble-fry. Fry the ham slices along with it.
Food Coloring
Food coloring. Just don't go overboard - a few drops will color several scrambled eggs nicely.
ok first make eggs and then go get some ham and the use food coloring that is green
Break your essg in a bowl. Mix in blue food color. (yellow+blue+green) then scramble as usual.

Green Eggs and Ham Breakfast Sandwich
INGREDIENTS
1 (10 ounce) container refrigerated extra large biscuit dough
1/2 pound sliced bacon
3 tablespoons olive oil
1/2 medium onion, chopped
1 jalapeno pepper, seeded and chopped
4 roasted green chile peppers, seeded and chopped
1 teaspoon salt
1 teaspoon pepper
6 eggs
1/2 cup milk
1 cup shredded Monterey Jack cheese
DIRECTIONS
Prepare biscuits according to the directions on the package. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
Heat olive oil in a large skillet over medium heat. Add onion, jalapeno, green chile, salt, and pepper. Fry, stirring, until onions are soft. Whisk together the eggs and milk; pour into the skillet. Stir frequently until eggs are scrambled and cooked through.
Split biscuits in half. Place some of the scrambled egg mixture on the bottom half, criss-cross two slices of bacon over the eggs, then top with shredded Monterey Jack cheese. Place the other half of the biscuits on the top, and serve.
ok here is an easy one
1/4 teaspoon Green Food color
5 tablespoons Water
Sliced Ham
2 Eggs
Non Stick Fry Pan
Non Stick Spray
Directions:
Mix food color and water, set aside. Separate egg white from egg yolks. Place two teaspoons of food color with egg white and mix. Put two tablespoons of food mixture with egg yolks. Brush ham with food color and fry ham until cooked, remove from pan. Place egg whites in fry pan and cook just until they start to set.
Place egg yolks on top of the egg whites. Add an additional teaspoon of color mixture to egg to help steam eggs. Put a lid on top of fry pan and finish steaming eggs until done.
If the children prefer scrambled eggs, you may want to add two teaspoons of food color mixture to eggs and scramble. When cooking scrambled eggs, cook on medium heat stirring briskly until done.
Deviled eggs. Just add green food dye to the deviled part. For the ham, if you make it with pineapple, you can add the dye to the pineapple in the can and let it sit (preferably overnight in the fridge) all the dye will soak into the pineapple, as well as the juice or syrup.
spinach liquefied in the blender and added to the eggs (ie Eggs Florentine)
If your kid eats scrambled eggs you are home free with just food coloring.
However, the picture in the books show fried eggs. So use two eggs, separate the yolks from the whites, mix the whites with a bit of food coloring until blended, use your smallest non-stick pan and a good amount of butter so the whites won't stick, put the green whites in the pan and the egg yokes on top and cook sunny side up, so they look like the pictures. You might cover the pan to cook the yolks a little more.
Serve with ham.
Oops. Missed the fact it was a party! Get a "muffin top" baking pan (or two?) and follow the above only bake the eggs in the oven. I think it will take about 10 minutes at 400 degrees but I would check that before the party.
Good luck!
Well, since the kids are about 7, I think once they see green scrambled eggs on their plate, chances are they won't eat it LOL. If they like boiled eggs, you can just boil them and pain them green. Kids can then crack them open and eat the egg inside with some butter and salt and pepper. Has far as the ham goes just get the sliced ham and fry it up.
Don't listen to the clearly foolish person who said that food coloring will make your child ill.
My mom made me Green Eggs and Ham once when I was a kid. She made the eggs scrambled, with green food coloring just like everyone suggested. Technically, the green eggs are supposed to be sunny-side up, but I can't think of a way to do that.
On a funny side note, my mom way over-salted the eggs. When I asked why the eggs were so salty, she said that green eggs are always salty. In retrospect, this was a pretty clever way to keep me from requesting green eggs again!
Scramble some eggs with pesto sauce, cream cheese and diced ham. Its very good and it comes out very green. Its been on the menu of several restauranst where I worked.
