Cooking Cakes For A Diabetic? I Need Help =]?!


Question: My friends grandma is diabetic, but i thought it would be nice to make some easter crispy cakes for her seeing as i am going to see her soon.

I'm not sure if i should use diabetic chocolate or plain chocolate? Or is there a recipe involving cocoa powder?

Or

Rice crispies or Shredded wheat?

Which is the safest and most edible, as I dont want them to turn out tasting horrible?

Also, are there diabetic sweets available i can put on top of them?

Use Splenda instead of sugar and sugar free chocolate. It is very good these days. See's candy also makes an excellent peanut brittle. Amazing.

Shredded wheat has a lower glycemic index than rice crispies but I suspect either would be acceptable.
