Any sauce recipes for making different sauces?!
1 can coke - the full fat one
1 small bottle orange juice
a big squirt of tomato ketchup
and 4 big tablespoons of brown sugar and same of honey
cover what ever you are cooking on roast it
sound vile but tastes excellent
sweet chilli
2 tea spoon honey
1 table spoon fish sauce
1 table spoon white blasamtic vinegar
1 red chilli chopped
ginger - a small piece chopped finely
can be used uncooked or cover chicken or prawns and cook
chocolate sauce
cocoa
icing sugar
butter
splash of water
cover ice cream and eat - best with broken up malteasers in
yum

The best sauce to make is the basic roux sauce, then you can add what you want to it, parsley, cheese, mushrooms
Basic White Sauce
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. Add more or less milk depending on desired consistency.
Cheese Sauce:
To hot white sauce, stir in 1 cup of shredded cheddar cheese, stirring over low heat until melted.
3 tablespoons sugar
3 tablespoons vinegar
1 tablespoon plain flour
1 tablespoon soy sauce
1 tablespooon tomato puree
pinch of salt
drop of sesame oil
Mix together for a nice sweet and sour sauce OR add a tablespoon of Sweet/hot chili sauce for a hot and sour sauce
Dill Sauce.
1 tbsp flour
1 tbsp butter
1 cup sour cream
1 cup chicken broth
1 tbsp dried dill weed
salt to taste.
Melt the butter and the flour together in a saucepan,
add the sour cream and then the broth
stir in the dill and season with salt to taste.
Great on pork, chicken, fish, potatoes, pasta....
Super versatile!
Important thing is good stock and roux. With this two items you can make all types of sauces. White sauces with clear stock and white or blond roux. Brown sauces with brown stock and brown roux. Even red sauces with brown stock and tomato paste.
A good tomato sauce is the foundation for so many wonderful dishes - pizza, pasta, chicken, and fish. Here is a recipe for a basic tomato sauce that starts with a soffritto of onions, carrots, and celery cooked in a little olive oil, to which garlic, tomatoes and seasonings are added. 2 Tbsp olive oil
1/2 medium onion, finely chopped
1 small carrot or 1/2 large carrot, finely chopped
1 small stalk of celery, including the green tops, finely chopped
2 Tbsp chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon dried basil or 2 Tbsp chopped fresh basil
1 28 oz. can whole tomatoes, including the juice, or 1 3/4 pound of fresh tomatoes, peeled, seeded, and chopped
1 teaspoon tomato paste
Salt and freshly ground black pepper to taste
1 Heat olive oil in a large wide skillet on medium heat. Add the chopped onion, carrot, celery and parsley. Stir to coat. Reduce the heat to low, cover the skillet and cook for 15 to 20 minutes, stirring occasionally until the vegetables are softened and cooked through.
2 Remove cover and add the minced garlic. Increase the heat to medium high. Cook for garlic for 30 seconds. Add the tomatoes, including the juice and shredding them with your fingers if you are using canned whole tomatoes. Add the tomato paste and the basil. Season with salt and pepper to taste. Bring to a low simmer, reduce the heat to low and cook, uncovered until thickened, about 15 minutes. If you want you can push the sauce through a food mill to give it a smooth consistency.
Makes 2 1/2 cups of sauce.
