Recipe ideas for main meals for a picky eater, see list below for details.?!


Question: I have a very picky person to cook for and I'm looking for recipes. Can anyone help ?

Things that wont be eaten:
- not any kind of seafood
- no leafy green vegetables
- no asian vegetables
- no mushrooms
- no fresh tomatoes (canned is okay)
- no baby corn
- no pork
- no other meats (duck, lamb..etc)
- no creamy sauces
- no noodles
- no zuccinni
- only chicken that will be eaten is the breasts
- only beef that will be eaten is mince and cuts with no fat or gristle

I'm looking for recipes that are healthy and tasty and I'm having alot of trouble coming up with new ideas, please someone help.

4. In a rush? Smithfield, Hormel, Armour have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Use this for your meat dish with a side dish or two of vegetables, rice, or potatoes. You will find these packages near the meat section, they are not frozen.

5. Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy in jars, a canned vegetable, canned cranberry sauce, and frozen Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.

6. Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat meal into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Crock-pots can be bought at your grocery store, WalMart, Target, etc. BE SURE to read the booklet that comes with the crock-pot.

7. If you are in a hurry, go to your grocery store and pick up a roasted chicken that you can buy in the deli section. They also have side dishes such as veggies, salads, desserts, and etc.

8. Frozen dinners are always a good choice. Our favorites are Stouffer's, Marie Calendar's, Michael Angelo's, Boston Market's. Just add a side dish, salad, or fruit salad. Desserts can be bought at their bakery section.

Parmesan Chicken breast: Put 1/2 cup Parmesan on a plate, season with garlic powder and Italian seasoning, dredge the breast in melted butter, then parmesan, and cook in pan in melted butter on medium heat 4 min per side. You might like a little spaghetti sauce spooned over.

BBQ Chicken breast: Coat breast all over with bottled BBQ sauce, place in baking dish and bake at 350 30 min or until juices run clear.

Buffalo Chicken breast: Coat breast with melted butter, then douse with Frank's Red Hot Sauce (or whatever hot sauce) and bake at 350 30 min until juices run clear

Beef tacos with the hamburger, top with cheddar, sour cream, hot sauce

Brown the ground beef, add can of baked beans, and some cut up weiners, worcestershire, brown sugar or molasses, a little mustard, a little ketchup, yum

Roast beef

Top mixed steamed veggies with butter and a little salt, then bacon bits and/or chopped nuts for interest

By the way, I make 'salads' all the time without the lettuce, I use diced cucumber, carrot, bell pepper, whatever veggie you like and put salad dressing on and enjoy

Gee whiz! I say cook what YOU like and enjoy and let that picky person starve. When they get hungry enough, they'll either eat it or fix their own picky meals!!!

ONE SKILLET CHICKEN CACCIATORI

2 tbs olive oil
1 medium onion, sliced
1 clove minced garlic
1 1/2 cup fresh mushrooms pieces
1 package of skinless split chicken breasts, or thighs- about 3-4 breast, or 4-5 thighs
2 cans Delmonte garlic and onion tomatoes-diced, undrained
2 cans diced tomatoes, undrained
1 6 oz can of tomato paste
3/4 cups dry white wine, or cooking sherry
1 tsp sugar
1/2 tsp dried rosemarry
1/2 tsp dried oregano
1/2 tsp dried basil
1/tsp dried thyme
salt and pepper for taste
1 tbs parsley
mozzarella or Parmesan cheese
1 pkg linguini or thin spaghetti noodles

Heat oil in a large skillet. Add chicken. Brown well on both sides, about 2-3 mins on each side. Remove and leave drippings.
Add onions, garlic and mushrooms, saute until vegetables are just tender, about 5 minutes. Return chicken to skillet.

Meanwhile, mix together in a medium bowl, the diced tomatoes, paste, wine, sugar, salt and seasonings. Pour over chicken and vegetables. Bring to a boil; reduce heat and cover. Simmer on low temperature for 30-35 minutes or until chicken is no longer pink. (if you use a meat thermometer, 170 * for breasts, 180* thighs). Sprinkle the chicken with parsley and cheese.

I assume this person is a teenager? Bear in mind that a person's taste buds change every 5-7 years while growing, so if any of these items are nearing 4-5 years, try 'em again. Especially the salads and greens.
I agree with the no fat or gristle, no fresh tomatoes, and no creamy sauces. I had to adjust my diet as a teen because of my sensitive stomach. No greasy stuff, and no hot dogs, bologna, sausage, bacon, or greasy burgers. Because of this, I sorta became a semi-vegan.
Try these simple ideas:
Loaded pizza without tomato sauce
Beans and cornbread
Baby peas with melted cheese
Turkey bacon slices on toast with cheese
Grilled cheese sandwich and chile with canned tom/beans
Dishes that call for whole potatoes, but substitute turnips without telling.
I guess a tuna & pea casserole is out, but yummmm!!
Simple fruit bowls like apple/banana/mandarin orange
Let that person participate in using "The Juicer."
Tell that person he/she can have a small glass of wine with an item that you want them to eat (if they're at least 16).
I coulda had more ideas, but I'm just not real hungry right now!
