Broccoli salad - do you include the stems?!
Answers: I am making broccoli salad for the first time, and was wondering if you have to chop up the stems to include in the salad, or just use the florets? Thanks.
I would use just the florets. The stems may be a little tough for a raw salad, but definitely save them for a stir fry! They are tasty & high in fiber.
you can use the stems but they seem to be a bit tough when they arent cooked. the florets break down a little in the salad sauce and arent as tough to begin with, that is why they are fine.
The classic Southern Recipe is the florets. So yes you would remove the stems.

For a salad, I would just use the florets. I would save the stems, chop them up and use them in a vegetable soup.

peel the stems, and slice them thinly. otherwise use them for stir fry or soup.
