Healthy (easy) recepies for chicken & fish?!


Question: What are some healthy, tasty ways to cook chicken breast and fish? My personal trainer said to stick to these foods mainly for dinner and I'm not sure how to cook them correctly. I usually just bake fish with some seasonings and pan fry chicken breast (cut into tenders) in some olive oil & garlic. Not sure if frying is healthy, I heard olive oil is good for you. Anyway, I'm getting bored with this. I need some new ideas! Thanks!

Do you have a grill? It's much better tasting on the grill.

For chicken

-1 bottle of balsamic or light italian salad dressing ( i usually make mine with Good Seasonings Packet and Balsamic and red wine vinegar)

-1 Tablespoon of lemon juice

-1/2 Tablespoon of dried Rosemary

Mix together and pour over chicken. I usually marinade over night and then grill. Its easy low fat and tastes great.

Sunshine Citrus Sauce for Fish
? teaspoon grated fresh orange peel
? cup freshly squeezed Sunkist? orange juice
1 tablespoon margarine
? teaspoon salt
Dash of ground nutmeg
1 tablespoon minced fresh parsley
Combine all ingredients in a small pan. Heat until warmed through. Serve over poached or broiled fish fillets.



Asian Chicken and Orange Lettuce Wraps
? lb. ground chicken or turkey
? cup finely chopped red bell pepper
? cup finely chopped onion
2 cloves garlic, finely chopped
1 ? teaspoons finely chopped fresh ginger
2 tablespoons fresh-squeezed Sunkist? lemon juice
2 tablespoons hoisin sauce
2 teaspoons brown sugar, packed
1 ? teaspoons sesame oil
1 teaspoon low sodium soy sauce
5 to 10 drops red pepper sauce
2 Sunkist oranges, washed, peeled, seeded and chopped into ?-inch pieces
2 tablespoons cilantro or Italian parsley leaves, chopped
1 head Iceberg lettuce, separated into lettuce cups
Makes 4 servings.

In large skillet sprayed with nonstick cooking spray, sauté chicken over medium heat, crumbling and cooking until no longer pink. Pour into dish, set aside. Rinse out pan and spray with nonstick cooking spray. Sauté bell pepper, onion, garlic and ginger for 2 minutes. Add meat to pan.

In small bowl, blend lemon juice, hoisin sauce, brown sugar, sesame oil, soy sauce and red pepper sauce. Pour into pan and stir to coat chicken. Reduce heat and simmer, stirring until sauce is absorbed, about 4 minutes. Stir in orange pieces and cilantro. Serve with lettuce cups.

steamed fish is the way to go. just rub your fish with some salt pepper and basil then steam it until cooked. if you want a dipping sauce, use oyster sauce,sesame oil, and toasted garlic. this is very yummy.

Try panko breadcrumbs on your fish, then bake in a hot oven. It comes out nice and crispy.

As for chicken breast, it's so versatile. You can brown it in a pan with no breading, then pour in some white wine and mushrooms, and you have a sophisticated meal in minutes.

Also try different marinades. You can make a simple southwest marinade with lime juice, garlic, jalapenos, cumin, and olive oil, then grill.

This is a filipino recipe but i'm sure you wil like it! Yummy! This is my favorite!!! Hope it helps!!!=)

salmon is a really good fish and there are tons of marinades out there that you can marinade it in or just spoon on it before you bake it- you can either buy frozen salmon fillets or a whole salmon and cut it into fillets and anyway season it with your choice - i love lawrys lemon pepper marinade it is fabulous - simply bake on 425 for 30 minutes and it is fabulous serve with some whole grain brown rice and a nice salad- as for chicken try firing up the grill instead of frying those breast invest in some freezer bags and make some marinades that you like and marinate some breasts and throw them on the grill - then roast some sliced squashand zuchini in the oven on 425 for about 20 minutes while the chicken is on the grill- serve with carb of your choice- heat your grill to 350 and put your chicken on- flip your chicken every 6 minutes for 2 intervals chicken should be done 5minutes after 2nd flip. here is recipe for my fave chicken marinade:

2 cups apple cider vinegar
1/2 cup red wine vinegar
dash worchestershire sauce
1/4 cup sugar
1/4 cup seasoned salt (lawrys)
2 Tbsp olive oil
dash of pepper
mix all ingredients together and heat in microwave for 2 minutes then stir. let cool

place 4-5 boneless skinless breast in 1 gallon ziploc bag with marinade- let this sit overnight in refrigerator (atleast 6 hours)

also a quick easy meal buy a pound of ground chicken and brown and drain just like you would hamburger meat- add a can of manwich and have a fabulous sloppy joe! my husband loves these they actually taste better with ground chicken and less fat!

also try making stroganoff with ground turkey instead of beef and try making burgers with ground turkey instead of beef!

I love cooking fish and chicken in parchment. It keeps it moist, flavourful and is an easy clean up.

Cut a square of parchment, toss in the meat of your choice (I prefer to cut up the chicken for faster cooking, but not the fish), your seasonings/herbs,coarsely chopped veggies and drizzle in olive oil. Wrap up tight and bake in 400 degree oven, on a baking sheet, for approximately 20 minutes or until fish is flaky.

Brown chicken breast with a little olive oil. Place in baking dish & cover with 1 jar of chunky salsa with black beans & corn ( or whatever kind you like). Cover with foil, bake at 400 until done. Serve with spanish rice (yellow rice).

You can also buy frozen vegetables and stir fry your chicken with it. It is good, filling, and only takes one pot.

Pound breats thn--lay a stick of string cheese on each & roll up--secure with toothpick--set in baking pan--pour a jar of pasta sauce over & dust with parmesan cheese--bake 50-60 min @ 350...
