Any recipe ideas to make plain white fish more exciting?!


Question: Okay so the G/F has got some fresh cod fillets in for dinner tonight (good friday) but I'm actually not so keen on plain grilled fish.
Does anyone have any ideas of how to jazz it up a little bit?

Combine 1/2 cup seasoned bread crumbs, 1/2 cup grated Parmesan cheese and 3 Tbs olive oil.
Place fish in a shallow baking dish and put 2 - 3 Tbs Alfredo sauce over each fillet.
Put a generous portion of the bread crumb mixture over the Alfredo sauce.
Bake at 400 degrees for 10 - 12 minutes.

I always make home made fish and chips, make a batter with flour, milk and an egg, roll fish in a bit of flour and dunk in batter and deep fry, my lot love it! not the healthiest but hey! it is once a year.

Make a sauce with white wine, cream and tarragon

Just use a lot of spices.

There was a great recipe on BBC TV Recipe for Success. My boyfriend cooked me this and it was lush.

Fillett of Cod with Bombay Potatoes

Ingredients
For the potatoes
75ml/2?fl oz oil
450g/1lb potatoes, peeled and cut into 2.5cm/1in cubes
1 tsp mustard seeds
1 red bird's-eye chilli, finely chopped
1 tsp ground turmeric
small handful chopped fresh coriander
salt and freshly ground black pepper
1 garlic clove, sliced
For the cod
200g/7oz plain flour
1 tbsp chilli powder
4 cod fillets, each about 150g/5?oz
oil, for frying
To serve
lime wedges
chopped fresh coriander



Method
1. Preheat the oven to 200C/400F/Gas 6.
2. For the potatoes, place the oil in an ovenproof dish and heat in the oven until smoking.
3. Carefully add the potatoes and mustard seeds to the hot oil, stir well and place back in the oven for ten minutes. Be careful because the mustard seeds will pop when they hit the hot oil, so be sure to use an oven glove.
4. Add the chilli, ground turmeric, coriander and salt and freshly ground black pepper to the potatoes. Mix to ensure an even coating, then return to the oven and roast for a further 25 minutes.
5. For the cod, place the flour and chilli powder into a bowl and mix well. Dredge the cod fillets in the flour mixture, shaking off any excess.
6. Heat some oil in an ovenproof frying pan until medium-hot. Place the cod fillets into the pan and fry for three minutes on each side, turning carefully with a fish slice.
7. Place the cod fillets into the oven for a further 3-4 minutes, or until cooked through.
8. To serve, divide the Bombay potatoes among four serving plates. Place a cod fillet on top and garnish with lime and coriander.

Poach in milk and jism, then flake into rice, chilli, sweetcorn and peas.

Fish has a delicate flavour, therefore the accompaniment or sauce should be delicate, otherwiese it will smother the fish. Cod has absolutely no taste! And all fish should be very fresh. Haddock? Red Mullet. I was told by a famous chef that the fish that comes from the Med, like Red Mullet etc. should be cooked in Med style; Olive oil, garlic, Chillie etc.(pan fried)
Another good idea is fish pie. This is fish in a white (cheese? Not sure) sauce covered with a topping of mashed potato and baked in oven. Look up recipe in book or internet. It is ideal for people who don,t really like fish!

Probably the tastiest is to add herbs. Look in any recipe book for choice for fish. If don't have a good range, pop along to any sizeable supermarket and they'll overwhelm with their selections.

Plus, saute potatoes with garlic added alongside something green such as spinach, broccoli, green beans, even cabbage, etc, etc.

Promise, you'll be amazed how the herbs will raise the taste when baking gently in either water or milk in a medium heat oven.

Experiment to your own choice and enjoy...

yes serve it with chips and mushy pees and a sprinkle of salt yum yum in my tum.

pan fry it for five minutes each side with a few knobs of garlic butter and finish it off with some herbs...perfect!!!

Dip each fillet in some melted butter, then roll it in some crushed Ritz cracker crumbs. Bake for 20-25 minutes @375 degrees. My husband loves it, he says it gives it a lot of extra flavor.

There are loads of sauce mixes. That should help.

a little bit pepper and lemon can add to it.

I like to just dredge mine in seasoned flour and panfry in garlic butter, and serve with roast cubed root vegetables (20 minutes in a 250degC oven, potato, carrot, celeriac, parsnip), a lemon wedge and a green salad. And tartare sauce yum!

Cod is also a good firm flesh so does really well in curry - Thai green curry would be my choice.

Thai green curried Norwegian cod

Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins

Ingredients
450g/1lb skinned Norwegian cod fillets, cut into 2.5cm/1in cubes
110g/3?oz fresh podded broad beans, par-cooked
2 tbsp vegetable oil
8 spring onions, sliced
3 tbsp green curry paste
400ml/13?fl oz coconut milk
110g/3?oz peas
1 tsp light muscovado sugar
2 tbsp fish sauce
juice of 1 lime
2 tbsp roughly chopped coriander leaves
2 tbsp roughly shredded basil, or Thai basil



Method
1. Slit open the outer skin of the beans with your finger nail, or a small knife and pop out the bright green beanlet inside. Discard the tough skins. Place in boiling water and simmer for approximately 10 minutes.
2. Heat the oil in a saucepan, and add half the spring onions. sauté for about 30 seconds, until softened, then stir in the curry paste. Fry for 1 minute, stirring continuously. Add the coconut milk and bring to the boil.
3. Stir in the cod, peas and podded broad beans, and simmer gently for about three minutes. Season with the sugar, fish sauce and lime juice, simmer for one final minute, then draw off the heat, transfer to a serving dish and sprinkle over the herbs and reserved spring onion. Serve immediately with Thai rice.

bread crumbs

IN a blender put a small bunch of fresh coriander, 1 green chili, 2 garlic cloves, about 150ml of oil (olive is better) and a couple of tablespoons of vinegar, salt and pepper. Blend this until is all one shade of green, try it and adjust if needed.

Once the fish is made pour this over it, you'll love it.

The quickest/easiest way is to smear a little green or red Thai curry paste over the fillets and proceed as normal.

The G/F (I suppose that is the Good Fairy? LOL!) is looking at your healthy eating options and taking a good one on "plain" fish too...

To really push out the boat, make a stir-fry type dish (lots of any old veggies) and add said fish cut into chunks, pop on a lid and cook without stirring any more for the last five minutes (so fish does not break up too much).

Enjoy! (I am being lazy and putting prawns and a flaked Lidl smoked peppered salmon into a pasta and eggy sauce for Good Friday special).

Baked Cod Casserole


1. 2 tablespoons extra-virgin olive oil, divided
2. 2 medium onions, very thinly sliced
3. 1 cup dry white wine
4. 4 (5 ounce) Pacific cod fillets
5. 2 teaspoons chopped fresh thyme
6. 1/2 teaspoon kosher salt
7. 1/2 teaspoon black pepper
8. 1 1/2 cups finely chopped whole-wheat country bread
9. 1/2 teaspoon paprika
10. 1/2 teaspoon garlic powder
11. 1 cup finely shredded Gruyere or Swiss cheese



1. Preheat oven to 400 degrees F.
2. Heat 1 tablespoon oil in a large ovenproof skillet over medium-high heat. Add onions and cook, stirring often, until just starting to soften, 5 to 7 minutes. Add wine, increase heat to high and cook, stirring often, until the wine is slightly reduced, 2 to 4 minutes.
3. Place cod on the onions and sprinkle with thyme, salt and pepper. Cover the pan tightly with foil; transfer to the oven and bake for 12 minutes.
4. Toss the bread with the remaining 1 tablespoon oil, paprika and garlic powder in a small bowl. Spread the bread mixture over the fish and top with cheese. Bake, uncovered, until the fish is opaque in the center, about 10 minutes more.

Yield: 4 servings

A bit late for Good Friday dinner but try this anyway:

Fish Laksa with Lemon

2 x 70g packets 2-min noodles
400mL can light coconut milk
2-3 tbsp red curry paste
4 cups prepared vegetable stock
Shredded rind and juice of 1 lemon
1 tbsp fish sauce
300g boneless white fish, cut in 2cm pieces
2 cups sliced green beans
8 baby yellow squash, sliced

Place noodles in a bowl and cover with boiling water. Stand for 2 min then drain.
Meanwhile, heat coconut milk and curry paste in a pan for 2-3 min. Add stock, rind, juice and sauce. Bring to boil and add fish, beans, squash and drained noodles.
Cook for 2-3 min, or until soup returns to the boil and fish is cooked. Ladle soup into bowls, to serve.
Garnish with bean sprouts, coriander sprigs and sliced fresh chilli.

This soup can also be made with chicken breast instead of fish. Easy and delicious!

Wrap your white fish in tin foil after a good squeeze of fresh lemon juice, a drizzle of your favourite white wine and a 1 chopped glove of garlic add a generous dollop of butter(please not marg) add a hand full of ripped coriander and season to taste with black pepper. Seal the tin foil into a loose parcel and cook in a hot oven(180 degrees) for 15 to 20 mins.Serve in the foil at the table with a fresh salad and torn hunks of fresh bread

make a white wine sauce with prawns, the sauce is just made from the basic white sauce recipe then add wine and prawns

Dress them in mini basques and boots
