These are all tried-and-true ones I use regularly - some from books or websites, but mostly I alter them to suit our tastes:

Savage Cheesecake
Serves 8
Prep 30 min
Ready in 3 hours

Ingredients
1 pack Hobnobs
110gm butter
2 packs Philadelphia cream cheese
2 oranges
2 lemons
? pint/300ml cream
1 pack lemon jelly
1 pack orange jelly

Directions
Put biscuits into plastic bag, remove air & smash with rolling pin (or the bottom of a wine bottle will do grand!) until all crumbs.
Melt butter and mix in crumbs. You might need more butter but don’t have it too wet or it'll just taste sickening.
Press mixture into bottom of dish (preferably one that has a pop out base but any kind of dish is fine really. Put in fridge to set.
Melt jelly in microwave and add half a mug of cold water...leave to cool...but not to set...keep mixing it around and making sure it’s not setting!
Beat cream cheese with the juice and rind of the oranges & lemons.
Beat the cream separately & then fold into the cheese mixture.
When jelly is pretty cool (lukewarm is ok) add to the cream/cheese mixture.
Take base out of fridge and pour cheesecake mixture on top.
Place back in the fridge to set for at least 2 hours.

Award Winning Soft Chocolate Chip Cookies
Makes 30 cookies
Prep time 15 min
Cook time 12 min
Ready in 1 hr 40 min

Ingredients
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 cup butter, softened
3/4 cup packed brown sugar
1/4 cup white sugar
1 (3.4 ounce) package instant vanilla pudding mix
2 eggs
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 cup chopped walnuts (optional) Directions
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto parchment paper on ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.
Note: I couldn't get vanilla pudding, so used butterscotch which works perfectly - in case you're wondering, just pour the dry mix in, you don't mix it up first x

Kelly’s Dinner Rolls
Serves 8

Ingredients
1 1/4 C warm water
3 Tbsp sugar
1 Tbsp yeast
1 Tbsp oil
1 tsp salt
3 C flour
1/2 tsp baking powder

Directions
Dissolve sugar in water, sprinkle in the yeast. Add oil, stir, and leave to froth. Add to other ingredients (I sometimes put a few herbs in for flavour) and stir until dough starts forming a ball. With oiled hands flatten dough (for a pizza) or cut and roll into rolls (I think I used to make about 8, depends how big you want them) Bake at 230 degrees C for 12 - 15 mins.

Hungarian Goulash
Serves 2

Ingredients
1/2 tablespoon vegetable oil
3/4 onions, sliced (or onion powder for Nev)
2 teaspoons Hungarian sweet paprika
? teaspoon chilli powder or squeeze bottled chilli
1/8 teaspoon ground black pepper
Seasoned flour for coating
340 g beef stew meat, cut into 1 1/2 inch cubes
? can tomato paste (reserve rest to add with extra stock)
? - 1 cup low sodium beef stock (add ? first, then reserve rest to add if drying out)
? clove garlic, minced
? teaspoon salt

Directions
Heat oil in a large pot or Dutch oven over medium heat. If using, cook onions in oil until soft, stirring frequently.
In a medium bowl, combine onion powder if using, paprika, and pepper. Coat beef cubes in seasoned flour and saute with spice mixture in onion pot until brown on all sides. Pour in tomato paste, water, garlic and the remaining salt. Reduce heat to low, cover and simmer, stirring occasionally, 1 1/2 to 2 hours, or until meat is tender. If it is drying out, add reserved stock mixed with reserved tomato paste.

Note: add carrots and celery and whatever other veg can get away with. Can be made with potato in it rather than to the side.

Serve over noodles, mashed potato or rice.

Pot Roasted Beef with Red Wine, Bacon and Mushrooms
Serves 4 to 6
Preparation time15 min
Cooking time8 hours

Ingredients
2lb/1kg rolled brisket of beef
2 tablespoon flour
1 tablespoon English mustard powder
2 tablespoons beef dripping or olive oil
4oz/120g rindless smoked back bacon, cut into strips
6-8 shallots (baby onions)
6-8 baby carrots
1 small leek, peeled and sliced
2 cloves garlic, peeled and chopped
? pint/275ml red wine
2 medium sized tomatoes, chopped
sprig of fresh thyme
1 bay leaf
1 teaspoon balsamic vinegar
several dashes Worcestershire sauce
1 beef Oxo cube (or beef stock cube)
4 oz/120g button mushrooms
salt & freshly milled black pepper

Method
Combine together the flour and mustard powder and season well with salt and freshly milled black pepper.
Heat the dripping or olive oil in a thick based cooking pot.
Roll the beef joint in the flour mix and shake off any excess. Add to the hot pan and turn frequently until nicely browned. Just a few minutes should do. Remove the beef from the pan and put to one side.
In the same pan, add the bacon strips and cook for a couple of minutes until it starts to brown. Now add the onions, garlic, carrots and leek. Toss frequently allowing the vegetables to color gently for 2 to 3 minutes.
Now add the red wine to the vegetables along with the herbs, balsamic, Worcestershire sauce and stock cube. Bring the sauce up to a simmer and check the seasoning adding more salt & freshly milled black pepper if required.
Preheat the oven to 275F/140C/gas mark 1.
Add the beef joint to the sauce and bring back to simmering point. Cover the pot with a lid and place in the center of the oven for about 2? hours. Remove from the oven, add the washed button mushrooms nd bring back to a simmer. Return the pan to the oven for the last 30 minutes.
When the 3 hours has passed, remove the pot from the oven, carefully lift out the joint and keep warm.
Remove the bay leaf and thyme. Check the sauce for seasoning and adjust if necessary.

Steak and chips with a rocket and parmesan salad recipe (Gordon Ramsay)
Serves 4
Ingredients
For the chips
4 large Desiree potatoes
2 tbsp Groundnut oil
Salt and freshly ground black pepper
A generous pinch chilli flakes
For the steak
4 sirloin steaks (approx 200g-250g each)
Salt and freshly ground black pepper
2 tbsp groundnut oil
25g butter
For the salad
1 tbsp white wine vinegar
3 tbsp olive oil
Salt and freshly ground black pepper
120g rocket
50g parmesan, shaved

Directions
1. To make the chips: preheat the oven to 220C/ Gas 7.
2. Fill a large pan with boiling water, add a pinch of salt and place over a high heat. Cut each potato in half lengthways and then place the cut side down onto the board. Cut each half potato into 1cm thick wedges.
3. Add the potato wedges to the boiling water, bring to the boil again and boil for 3 minutes. Drain in a colander and then place the colander sitting over the pan, off the heat, to allow the wedges to dry further. Add the groundnut oil, salt, pepper and chilli flakes and toss well to coat.
4. Tip the wedges into a large baking tray (big enough so that the wedges sit in one layer so they crisp up evenly) and shake the tray until they are evenly spread out. Place the tray in the oven and cook for 30 minutes or until golden brown and crisp. Shake the tray once or twice during cooking to ensure even cooking.
5. To cook the steak: place one large or two smaller non-stick frying pans over a high heat and leave until smoking hot.
6. Place the steaks onto a large chopping board and if one needs to be cooked well done, roll it flatter with a rolling pin so that all the steaks can all go into the frying pan at the same time. Season the steaks on both sides with salt and black pepper and once the frying pans have reached temperature, add approximately two tablespoons of groundnut oil.
7. Carefully lay the steaks (the well done one first) in the hot frying pan. Tilt the pan away from you so that the fat is touching the side of the pan to ensure the fat is cooked and golden. Shake the pan to make sure the steaks aren’t sticking. Fry for 3 minutes on one side and then using tongs turn the steaks starting with the first steak you placed in the pan. Fry for 2 minutes and then add the butter to the pan. Spoon the melted butter over the steaks to baste them. Remove the rare steaks from the pan and set aside on to rest.
8. Leave the medium/ well done steak in the pan to cook for another minute. Remove the steaks from the pan and leave to rest for a few minutes on a large plate. Spoon the juices from the pan over the steaks to add extra flavour.
9. While the steaks are cooking, start making the salad. Pour the white wine vinegar, olive oil, salt and pepper into a salad bowl and then whisk to combine. Place the salad servers together over the dressing, place the rocket on top and then using a vegetable peeler shave the parmesan onto the rocket. Leave until you are ready to serve and then toss.
10. To serve, lay out four plates, place a steak onto each plate, pour over the juices from the resting plate, divide the chips between the plates and add a spoonful of salad.

Spicy Chicken
Serves 4

1kg chicken pieces, eg. thighs and drumsticks
1 onion, peeled and sliced
1 clove garlic, peeled and sliced
2 tbsp each chicken seasoning and coriander
? tablespoon cumin
1 tbsp paprika
1 red chilli, deseeded and chopped
Juice of one lemon (I use 2 but I like mine very lemony)
2 tbsp soy sauce
8 sprigs thyme, and more to garnish
2 tbsp sunflower oil
2 tbsp muscovado or granulated sugar
500gm potatoes, cut into 5cm pieces
2 carrots, cut into 3cm pieces
600ml hot chicken stock

1 (1 lb) package of lasagna noodles
2 (15 oz) containers of ricotta cheese
2 tbsp of dried parsley flakes
1 c. of pitted ripe black olives (sliced)
1 lb of mozzarella cheese (shredded)
1 c. of parmesan cheese (grated)
3/4 lb of ground beef
1/4 lb of ground pork
1 lb of Italian sausage (thinly sliced)
1 lb of button mushrooms (thinly sliced)
1 c of onions (chopped)
6 cloves of garlic (minced)
2 tsp. of sugar
1 tbsp. of salt
1 tsp of dried basil
1/2 tsp of fennel seeds
1/4 tsp of ground black pepper
2 beaten eggs
Marinan Sauce
2 (14 1/2 oz) cans of hunts chunky crushed tomatoes
2 (6 oz) cans of hunts tomato paste
1/4 c of extra-virgin olive oil
6 cloves of garlic (cut in halves)
1 tsp chopped garlic, in juice (from jar)
1 diced shallot
2 tbsp of dried oregano
4 tbsp. of dried Italian seasoning
1 tsp of dried basil
1 tablespoon granulated sugar

Directions
FOR THE LASAGNA: First you want to cook lasagna
Drain and put aside.
Now cook the Italian sausage in a skillet cut thin and then put this aside.
Now you can cook the ground beef and ground pork in a skillet, drain off grease.
Next you can add in the onion and garlic to the ground meat, stir and cook approx. 5 minutes.
Then add in the sugar, salt, basil, fennel seeds, pepper and the Marinara sauce and simmer for 20 minutes.
Now while your mixture is simmering, add a large bowl the eggs, Ricotta cheese, and parsley. Mix.
Now reheat oven to 375 degrees.
Take a baking dish and spray the bottom with Pam.
Now spoon in a layer of 1/3 of the meat sauce.
Then add a layer of1/3 of the lasagna pasta (overlapping each strip of pasta with the other).
Next add a layer 1/3 of the Ricotta mixture.
Then add a layer 1/3 c.of the sliced olives and 1/3 c. of the sliced Italian sausage.
Then you can add a layer 1/3 c. of the sliced mushrooms.
Then layer 1/3 c. of the Mozzarella and 1/3 c. of the Parmesan.
You will continue this process until finished..
Add aluminum foil, and then bake for 25 minutes.
Now you want to remove foil and bake, uncovered, approx. 25 minutes.
Then you ca remove from oven and allow to sit and sit about 10 minutes before cutting.
For Saurce: First you want to add the Hunts chunky crushed tomatoes and Hunts tomato paste into your favorite pot.
Now add in the extra-virgin olive oil to the pot.
Next slice the cloves of garlic crosswise into either halves or thirds or pieces, and add them into the pot.
Now dice the shallot, and dump that into the pot.
Next you want to add the rest of the ingredients, and stir to mix well with a large long handled wooden spoon.
Don't strain this.
Now put a lid on the pot and cook on medium flame stirring approx. 10 minutes for about an hour or until it bubbles and is completely heated throughout.
This can now simmer, and simmer stirring about every 10 or 15 minutes to keep from burning or sticking to the bottom of the pot for 1 or 2 hours.
Add to lasagna.

How about really easy scotch eggs.
You need 5 eggs, 4 thick sausages and some breadcrumbs.
Hard boil 4 eggs.
Take the skin off of the sausages and discard. Wrap one sausage around one off the eggs and mould it round til the egg is completely coverered by the meat. Use one sausage per egg.
Then beat the last egg and roll the other eggs in the meat into the raw egg. Completely cover in egg then roll each one in the breadcrumbs.
Once they are done you need to fry the scotch eggs. You can either deep fry them until they are brown or shallow fry them and keep turning them until they are cooked.

A really good easy recipe for salmon;

Mix grated garlic, ginger, soy sauce, cayenne pepper, a little sugar and lemon juice together in a jug (you can adjust all of these according to your own personal taste)

Pour over salmon fillets cover with tin foil, and bake in a moderate oven for around 20 minuets.

Serve over mixed rice and pour over the juices from the pan.
Simple and delicious!

You need chop meat, cheese

Put a few slices of cheese in the middle of the chop meat and make into burgers with cheese on the inside. once done you'll thank me.

Toffee Bars
1/2 cup softened butter
1/2 cup white granulated sugar
1/2 teaspoon salt
1/2 cup whole wheat flour
1/2 cup white non-bleached flour
1 14-ounce can sweetened condensed milk
2 tablespoons butter
1/4 teaspoon salt
2 teaspoons vanilla extract

Frosting
1 ounce unsweetened chocolate
2 tablespoons butter
1 1/2 cups powdered sugar
1 tablespoon vanilla
2 tablespoons hot water

For the bars, cream the 1/2 cup butter, white sugar, and salt. stir in both kinds of flour. Pat mixture into ungreased 13x9x2-inch baking pan. Bake at 350 degrees till lightly browned, or 15 minutes. In heavy saucepan stir condensed milk, 2 tablespoons butter, and 1/4 teaspoon salt over low heat till butter melts. Cook and stir for 5 minutes over medium heat. The mixture will thicken and become smooth. Stir in vanilla. Spread over baked layer. Bake at 350 degrees till golden, or 12 minutes. Next to make the frosting, melt the unsweetened chocolate and the butter in a small saucepan over low heat, stirring constantly. Remove from heat. Stir in the powdered sugar and vanilla. Blend in hot water. Spread the frosting over the bars while they are warm.

how about something nice and sweet?
peaches in syrup
4 large peaches
1 litre water
250 g granulated sugar
1/4 tsp ground ginger
few drops of vanilla essence
to make the syrup boil water and sugar til sugar dissolves. add ginger and vanilla essence and remove from heat. skin the peaches and poach whole in the syrup about 20 mins or until very tender. leave the peaches in the syrup until you are ready to eat them. Serve chilled with a nice vanilla ice cream. a very easy and quick pudding
