I love me some PECAN PIE!

INGREDIENTS:

7 tablespoons melted butter
2 large eggs
1/3 cup whipping cream or heavy cream
1/3 cup dark corn syrup
pinch salt
1/2 teaspoon ground cinnamon
1/2 cup light brown sugar, firmly packed
1 cup coarsely chopped pecans
1 prepared 8-inch graham cracker pie shell
sweetened whipped cream or vanilla ice cream

PREPARATION:

In a mixing bowl, combine the melted butter, eggs, whipping cream, corn syrup, salt, cinnamon, and brown sugar; mix well. Stir in pecans. Pour mixture into the prepared crust. Place pie on a baking sheet and bake in a preheated 350° oven for 30 minutes, or until top of pie is browned and puffy.

Watch carefully to prevent burning. Filling will firm as it cools.
Serve with ice cream, whipped cream, or whipped topping.

1 Envelope unflavored gelatin
1/4 c Cold water
1/2 c Sugar
1/4 c All-purpose flour
1/2 ts Salt
1 1/2 c Milk
3/4 ts Vanilla extract
1/4 ts Almond extract
3 Egg whites
1/4 ts Cream of tartar
1/4 c Sugar
1/2 c Whipping cream, whipped
1 c Flaked coconut
1 Baked 9-inch pastry shell
Additional flaked coconut
-(opt.)
Red & green candied
-cherries

Soften gelatin in cold water, and set aside.

Combine 1/2 C sugar, flour, and salt in a saucepan;
gradually add milk, stirring until blended. Cook over
medium heat, stirring constantly, until mixture
thickens and comes to a boil. Boil 1 minute, stirring
constantly. Remove from heat; stir in softened
gelatin and flavorings. Cool.

Beat egg whites (at room temperature) and cream of
tartar until foamy; gradually add 1/4 C sugar, 1 T at
a time, beating until soft peaks form. Fold egg
whites, whipped cream, and 1 C coconut into gelatin
mixture; pour into crust. Sprinkle with additional
coconut, if desired. Chill until set. Garnish with
candied cherries.

Buy one pie.

Cook for around an hour.

Limeade pie
1 (6 ounce) can frozen limeade concentrate
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed (cool whip)
1 (9 inch) prepared graham cracker crust



DIRECTIONS
Mix limeade (may substitute lemonade concentrate) and sweetened condensed milk in a large bowl. Fold in nondairy whipped topping. Pour filling into graham cracker crust. Chill 1 to 2 hours.

Easy Creamy Jello Pie

1 lrg box jello (your choice of flavor)
1 cup whipped topping
1 graham cracker crust

Make the jello according to package directions. Let the mix cooled in the fridge for 30 minutes or so. Mix in the the whipped topping and pour into the pie crust. Refrigerate 4 more hours until the jello has set.

I know this is longer than 2 hours but it is easy and yummy!

Feel free to add any chopped nuts, candy pieces, fruit chunks, etc when you mix in the whipped topping.

Perfect Pecan Pie

INGREDIENTS
1 1/2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons white sugar
1/2 cup butter, chilled
4 tablespoons ice water
3 eggs, beaten
3/4 cup light corn syrup
2 tablespoons dark corn syrup
3/4 cup light brown sugar
3 tablespoons butter, melted
1 pinch salt
1/2 cup pecans, finely crushed
1 cup pecans, quartered
1 cup pecan halves


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
To Make Crust: In a medium bowl, combine flour, salt and white sugar. Cut butter into flour mixture until it resembles coarse crumbs. Gradually sprinkle the water over the dry mixture, stirring until dough comes together enough to form a ball.
On a floured surface flatten dough ball with rolling pin. Roll out into a circle that is one inch larger than pie dish. Place pie shell into dish and refrigerate until pie filling is complete.
To Make Pie Filling: In a medium bowl, mix together eggs, light and dark corn syrups, brown sugar, butter, salt and finely crushed pecans. Spread quartered pecans over bottom of refrigerated pie crust. Pour syrup mixture over top of pecans, then arrange pecan halves on top of pie.
Bake in a preheated 350 degrees F (175 degrees C) oven for one hour or until firm; let cool for one hour before serving
