Don't flip out that I get help from a box mix, but cooking is about quick and fast, isn't it? This is the one that I use when I'm in a hurry:

Moist Chocolate Cake

1 bx. (18 oz) Betty Crocker Dark Chocolate or Chocolate Fudge cake mix
Non-stick cooking spray with flour (Pillsbury)
1 tsp cinnamon
1 cup Best Foods Mayonnaise
1 cup water
3 eggs

Preheat oven to 350 degrees. Spray two 9-inch round cake pans with cooking spray. In large mixer bowl, stir cake mix and cinnamon until mixed. Add mayonnaise, water and eggs. With mixer at low speed, beat 30 seconds or until combined. Beat at medium-low speed 2 minutes. Pour into prepared pans. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Sprinkle with confectioners sugar or fill and frost as desired.

I make mine in a Bundt pan because it is easier to cut and slice and I don't make any frosting. Follow the same mixing instructions, but bake for 40 to 45 minutes,or until toothpick inserted in center comes out clean. Cool in the pan on a wire rack for 25 minutes. Invert the cake from the pan and let it cool completely. Frost as desired.

I usually slice mine and serve with a drizzle of chocolate fudge sauce, a spoon of cherry pie filling and a dollop of Cool Whip. Another way is with ice cream!

I hope you try it and enjoy!

Chocolate Mayonnaise Sheet Cake
3 cups flour, unbleached, sifted
1/3 cup cocoa, baking
3 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cups mayonnaise(use a good quality mayo: Best Foods or Hellmann's)
1 1/2 cups sugar
1 1/2 cups water, cold
1 1/2 teaspoons vanilla extract
Fluffy Chocolate Frosting
1 cup brown sugar, packed
1/3 cup chocolate chips, semisweet
3 tablespoons half-and-half or light cream
1/2 teaspoon vanilla extract
3 tablespoons butter or regular margarine(butter preferred)
Preheat oven to 350 degrees F.
In a bowl, sift together the flour, cocoa, baking soda, and salt; set aside. In the bowl of an electric mixer, combine the mayonnaise and sugar and beat at medium until blended.
With mixer running, gradually add the cold water and vanilla.
Add dry ingredients to mayonnaise mixture, beating until well blended, about 2 minutes. Pour batter into buttered 13x9x2-inch baking pan. Bake in 350 degree F oven 40 minutes or until cake tests done. Cool in cake in pan on rack.
Meanwhile, begin your Fluffy Chocolate Frosting: In a saucepan over medium heat, combine the brown sugar, half and half or light cream, and butter. Cook over medium heat, stirring constantly, until mixture comes to a boil; let boil 1 minute, then remove from heat. Stir in the chocolate chips and vanilla. Beat with an electric mixer at high speed until the consistency is fluffy and is spreadable. When cake has cooled, frost it with the Fluffy Chocolate Frosting.
