Shittake Mushrooms?!


Question: I just bought some shittake mushrooms, and don't know what to do with them. I've never bought any kind of mushrooms. Does anyone know some good food ideas.

I am a former chef and have been using them since the early 1980's when they were sodl here in Canada fresh, but the dried one are not to bad either, the stems are very woody so either discard them or put them in a vegetable broth for flavour.

As for what to do with them fresh ones can be used like any other mushroom there even nice sauted with a steak alone or with white one, in soups, sauces, risottos, stir frys, stuffing and stuffed with a veggie or meat topping and served baked and there an appetizer.

Dried one have to be soaked and stewed to soften them, they are better in long cooked sauces or braised item with an Asian flavour.

I like to use Shittake mushrooms in mushroom risotto. Here's a good recipe.

I love to use shittake mushrooms in a stir-fry. They have great flavor.

Use them in stir frys with lots of veggies. Chop them up and put them in an omlette, or casserole. Stuff them and bake them in the oven or on the grill.

It really depends if they are dried or fresh. If they are fresh you can slice them and saute them in a little oil for a few minutes in a frying pan. Add a little garlic and onion and saute in olive oil for a few minutes then add the mushrooms. When they are ready/soft (after 7-10 minutes), add a couple of tablespoons of fresh parsley and a bit of salt and pepper. You can eat the mushrooms as a side dish.

PUT THEM IN VEGGIES OR STIR-FRY DINNERS,OR EVEN PUT THEM IN SOUPS AND THEY ALSO TASTE GOOD IN PASTA ,OR CHINESE FOOD.......
