Cream of broccoli soup, mustard chicken with baked potatoes and a green salad, cake and ice cream for dessert.

To make the soup: Cook a package of frozen broccoli according to package directions. Place in a food processor or blender and add 1 pint heavy cream. Process untill smooth. Return the soup to a pan and heat until warm. Add salt and pepper to taste. (This should take about 20 minutes, start to finish) Serve with chopped green onions

To make the Main Dish: Heat the oven to 400. Bake the potatoes for one hour. While the potatoes are cooking, prepare 2 chicken breasts. Coat both sides in Dijon mustard and then coat in breadcrumbs. When the potatoes have about 30 minutes left, put the chicken breasts in the oven too. Serve with a salad. You can buy a head of lettuce and wash it, or buy a bag of salad already washed. Serve with your favorite bottled dressing or make your own by mixing 2 parts olive oil, 1 part red wine vinegar and then adding garlic powder, dried oregano, dried basil and salt and pepper to taste.

Get a boxed cake mix and make it ahead of time and serve with ice cream.

Pumpkin soup is quick, easy and cheap. Just cut up half a pumkin, an onion and add a few chicken stock cubes, place it in a pot and just cover it with water (not too much ). Put the lid on, bring it to the boil and then simmer it until it is soft, then put it in the blender. Serve with cream

Here's something really easy that tastes gourmet:

2 chicken breasts
(or you can cook a bunch and freeze the leftovers) Then double or triple the following mix:

Mix about 1/4 cup of Catalina Salad dressing (or french if you have it) with 1/4 package of dry onion soup.

Add any of the following that you'd think she likes:

1/3 can of whole cranberries or
1/3 jar of orange marmalade or
1/3 jar of any exotic lime/coconut jelly you can find

Mix the fruit with the dressing and onion and line a baking pan with foil. Put the chicken in and pour the mixture on top.

bake at 350 for about 30-40 minutes or longer if the chicken was frozen.

This makes an incredibly good chicken with a sweet pouring sauce that you can use like gravy.

Bake a couple of potatoes in the microwave.

Toss a nice salad.

Buy her favorite ice cream and topping and add a can of spray whip cream. Scoop into wine glasses if you don't have sundae glasses. top with hot fudge or whatever you think she likes best. Put a cone of whip cream on top and use the rest later when you get smoochy.


Very reasonable and easy smashing dinner.

PASTA PUTTANESCA AND SALAD
PASTA:
you'll need 500g spaghetti(cook it per package instruction)

SAUCE: ingredients: OLIVE OIL, 5cloves of garlic, 1kg tomato sauce,1 cup sliced olives, 1/2cup capers(drained and soaked in water for 1 hr then discard the water and squeeze the juice out and chop) 1 cup of white wine, 1 small can of anchovies(drained), basil, salt and pepper AND A PINCH OF SUGAR.

PROCEDURE: saute the garlic in olive oil do not burn the garlic for your sauce will BE bitter then add the anchovies then add the wine and simmer until it's reduced to half,then add the capers and olives and the tomato sauce and simmer under low fire for 5mins,then add the basil,salt and pepper to taste add a pinch of sugar(this is the love part).

SALAD:
artificial crab meat shredded, cucumber(deseeded and thinly sliced like the shredded crab meat), mayonaise and mix together and add salt and pepper to taste!

OR

Romaine lettuce, tomatoes, onions, cucumber, chicken breast(deboned boiled in salt and pepper and diced) ,mix all the ingredients and put any salad dressing you prefer.

DESSERT:

CHOCOLATE CAKE

Peanut butter and Jelly sandwich with a glass of grape Kool-aid.

Bake catfish filets', Place fish in a pan, season with a little salt and cayenne pepper, lemon juice and some parseley. (flakes is fine) Slice some potatoes and boil until tender, season and add a litle butter, (margarine will substitue) Steam some brocolli and a piece of garlic toast. You make your own. Butter the bread , sprinkle a little seasoning and bake until golden brown. You can do this, I hope you give it a try, You can use another kind of fish too.

Slow-Roasted Garlic and Lemon Chicken

1 chicken (approx. 2-2.25kg), cut into 10 pieces
1 head garlic, separated into unpeeled cloves
2 unwaxed lemons, cut into chunky eighths
small handful fresh thyme
3 tablespoons olive oil
150ml white wine
black pepper

Pre-heat the oven to 160oC.

Put the chicken pieces into a roasting tin and add the garlic cloves, lemon chunks and the thyme; just roughly pull the leaves off the stalks, leaving some intact for strewing over later. Add the oil and using your hands mix everything together, then spread the mixture out, making sure all the chicken pieces are skin side up.

Sprinkle over the white wine and grind on some pepper, then cover tightly with foil and put in the oven to cook, at flavor-intensifying low heat, for 2 hours.

Remove the foil from the roasting tin, and turn up the oven to 200oC. Cook the uncovered chicken for another 30-45 minutes, by which time the skin on the meat will have turned golden brown and the lemons will have begun to scorch and caramelize at the edges.

I like to serve this as it is, straight from the roasting tin: so just strew with your remaining thyme and dole out.

You have a few options, you could go to the fresh food section of coles. They have quite a large array of pre made options, like soup, meat already prepared ready to be good, and even vegetables already cut up. For Deserts you could always get a packet mousse from the jelly section "Greens"have a lovely chocolate mousse, make it up according to the directions, except maybe sprinkle some flake chocolate through the mousse when you are making it and on top of it for decoration......................so it's a bit fancier.

Alternatively you could try these suggestions below:

chicken and sweet corn soup

1 litre salt reduced campbells chicken stock liquid.
1 1/2 litres of water
1 tablespoon salt reduced chicken stock powder e.g. Massel brand.
500gm skinless chicken breast
1/2 cup shallots sliced
2 cups frozen corn kernels
2x 420gm cans of creamed corn
3 tablespoon soy sauce
1 egg white
pepper to taste

Place Stock liquid, water and stock powder in boiler. Once boiled, add whole chicken breasts. Cook 10 mins then remove the chicken breasts, shred or dice chicken then return to the pot with shallots, corn kernels, creamed corn and soy sauce. Bring to the boil, then reduce to slow boil. Cook for a further 10 mins. Whisk in beaten egg white, add pepper to taste.

Alternatively you could buy a small french stick, by some garlic butter from the supermarket to put on the frch stick and make garlic bread.

For the main, you could steam some rice, place it on a plate, then top it with a bbq steak and marinated vegetable skewers.

You could put vegetables such as onion, tomato, zucchini, capsicum, mushrooms on the skewers, marindate them and cook them on the bbq with the steaks.

With dessert, make sure you have it so you both eat out of the same bowl............maybe even feed her dessert!
