I have just been trying to make coconut buttercream from a new recipe and it has gone horribly wrong?!


Question: I whisked the butter to make it smooth, then I added sifted icing sugar, milk and vanilla extract and carried on whisking. However, as soon as all the ingredients combined the buttercream started to take on a weird texture and now it looks like curdled milk.
Can someone tell me what I've done wrong and is there anything I can do to reverse this?

Hannah-- It sounds to me like you used to much milk. Try adding more sifted sugar a small amount at a time until the icing comes back together I think that will save your icing. I always used a high ratio shortening to make butter cream, It works much better than butter especially in warm weather or in a warm climate.{ NOTE } Next time you make butter cream add about 3/4's of the milk called for then add the other 1/4 very slowely if needed. Hope this helps you.

you over mixed it

you need some heat...

With what you have said so far, sounds like you just need to keep a whisking and your butter may have been too cold, heat it up a tad bit!

Sounds like you have to much liquid.

You don't have coconut in the recipe you wrote in less the milk was coconut milk. Try heating up over water or microwave(be careful, do this bit at a time)

Next time warm the milk a little and make sure you beat all the time.
