Is this a good omelette recipe??!
Answers: OK...I grate some marble cheese (induated with lovely mint green flecks) crack four eggs, a bit of milk and pepper, then whisk it into a liquid. Place it in a heated, oiled skillet, flip it when it is bubbling, dump the cheese on it, along with 11 green peppers (whole) and cook for five more minutes after overlapping the egg. Does that sound right? Please advise. Thank you!
You really threw me for a couple of loops. First the marbled cheese with mint flecks, not so yummy as I am assuming you are talking about mold!!! Then you said you added 11 WHOLE GREEN PEPPERS!!!! Come on!!! This has got to be a joke, please tell me it is!!! This does not sound like a good omelette receipe at all!!!

yes, that sounds good, but I like mushrooms and ham in my omelette.
First, you should crack the eggs (three or four for a 10" skillet) and whip them with 1/4 cup room temperature water. Melt a pat (1 teaspoon) of butter or put in 1 teaspoon of oil, and pour the eggs into the pan. DO NOT STIR ... gently lift the edges of the eggs as they cook to pour the uncooked eggs under them. When the top is still 'barely cooked' add the GOOD cheese, and fold. I wouldn't add 11 whole green peppers ... they are HUGE ... and if you added 11 whole green chili peppers they may be too hot. I'd serve the peppers on the side ... fold the omelet gently, and let it 'slide' onto a plate ... you may then cut it in half if you are serving two, or put your peppers on and dig in. That 'five extra minutes' of cooking would OVERCOOK the eggs and make it taste 'burned' ...
Oil? No and no milk, the protein does not allow for maximum puffiness. Use water. And what is marble cheese? How about 3 eggs, butter, t-spoon of water, salt, pepper, dash of onion powder. Omelet filling: bacon, avocado, and Jack cheese (and on top). Some lovely salsa may be added on top if you wish. In California, we call that a Monterey Omelet. Yumm....(sans bacon).
