Healthier enchilada recipe?!


Question: I love ground beef enchiladas but I am eating healthy and want to figure out how to make them healthier. I plan to use ground turkey instead of beef as well as low fat cheese. I am trying to figure out how to make the tortilla part healthier, since I usually give them a light soak in hot oil to make them soft and moist. I have thought of maybe using the light flour tortillas, or perhaps just not frying the corn tortillas but I am afraid they will be very dry. Does anyone have any ideas?

Instead of using hot oil to soften your corn tortillas, you could give them a light soak in hot chicken broth. It will make them pliable enough to roll and, with enough sauce while baking, will work nicely with just about any recipe. Also, I've used low-fat white flour and light wheat tortillas in my recipes with great success.

Corn tortillas fried in a low fat or cholestterol free oil should still be healthier than flour tortillas.
