Light spring easter dessert??!


Question: I am looking for a good light dessert for easter sunday.I would like something spring like.. Not a heavy dessert. any ideas? I am already doing a fruit salad no although i love them don't need a fruit salad dessert:) post your recipe here. It tastes light and delicious and has no eggs! We'll be eating enough of those stuffed.

Easy Lemon/Lime Pie

Pre bake a frozen pie shell (hint put an empty pie plate on top to keep it flat)

Fill with a chilled mixture of
15 oz can sweeten condensed milk (not low fat)
Juice and zest of 1 and a half lemons
Juice and zest of 1 lime
? tsp vanilla
? tsp salt

Cover with
1 cup whipped cream, sweetened with
1 TBSP sugar
? tsp vanilla

Sprinkle with
Mini chocolate chips, to taste

strawberry parfait
ingredients:
-strawberries (mixture of different berries are yummy too)
-vanilla pudding
-whipped cream (can be the light version)
-angel food cake (found in the bakery section of supermarket)
-clear glasses or bowls (so that you can view your creation--it's very attractive-- great presentation)
- slivered almonds (optional, can substitute with your choice of diff. nut)

directions:
1. dice strawberries into bite size pieces
2. rip up with fingers angel food cake into little chunks
3. add a layer of angel food cake, then berries, then pudding, (can layer in any order you like)
4. keep layering until l the cup is full and then top with whipped creams and almonds.

**Pistachio Pie

2 envelopes Dream Whip
2 3/4 cups milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 small packages instant pistachio pudding mix
1 graham cracker pie crust

Combine both packages Dream Whip & 1 cup milk with a mixer.
Add vanilla & almond extracts and mix.
Add pudding mix & remaining milk (1 3/4 cup) and beat until thickened and fluffy.
Pour into pie shell and refrigerate for at least 1 hour.


**Cool Jello Salad

2 boxes peach Jell-O
1 1/2 C. boiling water
1 20-oz can pineapple (crushed) DRAINED WELL
1 14 oz can sweetened condensed milk
1 8 oz carton sour cream
1 C. chopped pecans

Mix Jell-O and boiling water until Jell-O dissolves.
Stir in other ingredients.
Pour into molds or 9x13 pan and refrigerate.


**Strawberry Cheesecake Bites

1 (8 oz.) package fat free cream cheese, softened
1/3 cup powdered sugar
2 tsp lemon juice
44 medium strawberries, whole
1/2 cup graham cracker crumbs


In a small mixing bowl, beat together the cream cheese, sugar, and lemon juice until smooth and creamy, set aside.
Using a paring knife, hollow out the top of each strawberry to a depth of approximately 3/4 an inch.
Gently fill each with cream cheese mixture using a pastry bag just slightly above the tops.
Place them on a cookie sheet(s) as you do this.
Once all of the strawberries are filled, dip each top into the graham cracker crumbs and place back onto the cookie sheet(s).
Place the cookie sheet(s) into the refrigerator and leave them for a few hours or over night to completely chill.

Below is a link to Lemon cupcakes with cream cheese frosting. It was in the latest issue of Kraft Foods' magazine that I got earlier this week. I thought it looked good. The one thing I'm going to change when I make it is I'll use 2 whole eggs instead of the 4 egg whites. That way I won't have the yolks leftover and the cupcakes will be more lemon-colored. If you don't want to make individual cupcakes, you could always make this in a 13 x 9 or as a layer cake.

Here's an easy, yummy dessert:

1 angel food cake
1 large package vanilla instant pudding
2 cups milk
1 large container CoolWhip
1 can crushed pineapple
2 cups sliced bananas (to avoid browning, soak in pineapple or lemon juice after slicing.)

Slice cake horizontally to form three layers. Make pudding with 2 cups milk and fold in half of the coolwhip. Let sit to thicken. Drain pineapple and add to pudding mixture. Layer 1/3 of the pudding on the first layer. Top with 1/3 of the bananas. Place layer on top and repeat with second and third layers. Top with remaining coolwhip.

Garnishes for cake:

1. Mix 1 cup of flaked coconut with 1 tsp green food coloring to form "grass"
2. Sprinkle small jelly eggs, Cadbury's mini eggs, and jelly beans on top of "grass'.
3. Separate marshmallow "peep" ducks or bunnies and place on cake.

or

Sprinkle with coconut and top with whole strawberries with stems attached.

one of my favorite desserts:
LEMON MELTING MOMENTS
2 c. (1 pt) whipping cream
1/2 c. superfine sugar
juice of 4 lemons
grated zest of 2-4 lemons
2 TB. sweetened condensed milk
8-10 fresh strawberries, for garnish
Combine all ingredients (except strawberries) in large, well-chilled mixing bowl and beat until very thick. Divide among 8-10 parfait glasses and chill until ready to serve. Top each with a strawberry. Would be good with a Pepperidge Farm piroutte or Bordeaux cookie too.....

Angel Food Strawberry Dessert

1 Angel food cake; store
-bought
1 pk Strawberry jello; 6 oz.
2 c Water; boiling
1 Cool Whip; 9 oz.
2 pk Frozen strawberries; 10 oz.

Tear cake into bite size pieces and spread in 9 x 13 pan. Dissolve jello in
water. Add 2 packages frozen strawberries and stir until dissolved. Pour
over cake. Cover with Cool Whip and chill.




Bunny Patch Dessert

1 10 3/4 oz. pk frozen pound
Cake, thawed, cut into 10
Slices
1 21 oz. can any pie filling
1 12 oz tub whipped topping,
Thawed
1 c Shredded coconut
Green food coloring
Jelly beans and asst. Easter
Decorations.

Line bottom of 12x8 inch baking dish with cake slices. Top with pie filling
and all of the whipped topping. Refrigerate 1 hour or until ready to serve.
Tint coconut pale green with food coloring. Sprinkle over center of whipped
topping. Decorate with Easter candies and decorations.




Cherry Angel Dessert

8 c Angel Food Cake; cut in 1/2"
-cubes
1 cn (#2) Cherry Pie Filling
1 pk Instant Vanilla Pudding
1 1/2 c Milk
1 c Sour Cream

Place half cake pieces in 9 x 9 x 2 pan. Reserve 1/3 cup cherry filling;
spoon remainder over cake. Top with remaining cake. Combine pudding mix,
milk and sour cream; beat smooth. Spoon over cake. Chill 5 hours, cut in 9
squares, garnish with filling.

since we have traditional food for Easter Sunday we don't do a desert. We eat for breakfast what we took to be blessed on the Saturday before like home made (yellow) sweet bread with colored eggs on top and have that with lots of butter with parsley in it, sausage, bacon, ham and horseradish. The cake we got blessed (for later that day) was plain white cake with white icing and jelly beans on top.

What about a jello cake. Lemon cake with lemon jello poured into the holes, covered with whipped topping and maybe some coconut.
