Egg yolks...?!


Question: every time i make meringue or souffle, i end up with a whole bunch of egg yolks that i dont know what to do with... any suggestions? besides buying just the whites in a carton?

I use only the yolks for custard. The most delicious custard one could ever want.
Ingredients
4 tbsp cornstarch
3 cups cups low-fat milk(1%)
2 tsp vanilla
4 egg yolks
1/4 cup butter

Directions
1Whisk cornstarch and milk in a medium saucepan until smooth.
2Bring the mixture to boil over medium heat, stirring constantly, then reduce heat to low, cook for 1 minute or until sauce thickens.
3In a small bowl, whisk together egg yolks and sugar. While beating constantly, add a little bit of warm milk mixture to the bowl to temper the eggs. Then add the egg milk mixture back into milk mixture.
4Cook over low heat stirring constantly for 5 minutes or until sauce thickens. When very thick remove from burner and add vanilla and butter
5Custard sauce can be used warm or chilled. Store in air tight container in fridge for up to 2 days. Great with fresh fruit or in tarts with fruit.

any egg dish, including French toast ... homemade pudding ... Hollandaise sauce ... Beat them up and drizzle them into homemade chicken soup

Hmm, yeah theres not much to do with egg yolks but maybe you could try french toast with just yolks? lol.

Make a flan

save the yolk for when you need to make something containing yolk or else you might as well chuck it off if it is of no use. no point eh?

We use them for scrabbled eggs.

They also make good scrambled egg sandwiches for lunch or Saturday night supper.

You can mix mushrooms, or onions, or fruit, or cheese, or just about anything in them.

Egg yolks are perfect for making home made custards from scratch. You can also use the yolks to make a hollandaise sauce. You could also probably find cheesecake recipes that use only yolks. I sometimes add egg yolks into macaroni and cheese bakes or brush it over types of bread as an egg wash. The possibilities are endless! But remember yolks contain tons of cholesterol.
