I understand that you can freeze it and defrost when you like, if I were freezing it I would do so in individual portions thus not having to re-freeze

it lasts for a couple months if you freeze it

yeah pritty much so as it will turn sour that is how sour dough is make from sour dough you can freeze dough and it will make really nice pizza bases

you can make it one day...you just wrap the dough after the first rise in plastic wrap. Then you put the dough in the fridge over night, take it out the next day, and proceed with the recipe. The time in the fridge takes the place of the second rise. Hope this helps!

Yeast dough can last for over a day . you just have to be care full about the temperature of the dough . for the best outcome possible try to have a dough with a temperature not over 27c when done mixing and wrap it in a plastic bag place it in the fridge at about 5c and you can work it off the next day. yeast enzymes don't work at low temperatures they start to work at 27c.
