How to Cook Southern Fried Okra
By JWSouza

Okra can be served boiled or stewed, but one of the best ways to eat it is fried. Crispy, golden brown, fried okra is a delicious side dish to almost any meal in the South. Try it where ever you live and you may find yourself cooking it again and again.

1/2 lb. of fresh okra
2 cups of dry corn bread mix
1 cup of buttermilk
Vegetable oil for frying
Large frying pan
Step 1:
Rinse and dry okra. Using a sharp knife and cutting board, slice the okra into 1/2 inch slices or discs, discarding the pointed tips and the stem ends.

Step 2:
Begin heating the oil in a frying pan over medium-high heat. Be sure to carefully monitor the oil during this process to ensure it doesn't get too hot.

Step 3:
Put the buttermilk and the corn bread mix into separate bowls. Coat the okra discs first in the corn bread mix, then dip them quickly into the buttermilk, then back into the corn bread mix again.

Step 4:
Carefully put the breaded okra into the hot oil and gently fry until the pieces are golden brown and crispy. Lightly salt the okra after removing it from the oil.

i know okura tempra.
use really cold water and flour
dont mix them much
dump okura into mix and fly.

the perfect recipe is here: http://www.crazyauntpurl.com/archives/20...

INGREDIENTS:
1 pound okra pods, stem ends cut off, sliced 1/4-inch thick
salt
cold water
yellow cornmeal
salt and pepper
PREPARATION:
Put sliced okra in a bowl, sprinkle generously with sal; cover with very cold water. Refrigerate the okra for at least 1 hour. Drain; roll okra slices in cornmeal seasoned with salt and pepper until well-coated.

Fry in a deep skillet in about 1/2-inch of hot oil until browned and crisp. Drain on paper towels and serve hot.
2 to 4 servings.

There are a couple of ways:
Okra (thawed)
2 eggs,beaten
1 Cup Cornmeal

Soak Okra in egg mixture for about 5-10 minutes
Coat with Cornmeal and fry. (350*)

With flour do the same thing but I would add a little milk to the eggs.

BREADED FRIED OKRA

10 okra
1 egg
1/4 c. milk
1 c. self rising flour
1 tsp. salt

Cut okra in diced form. Mix egg and milk together in a bowl. In a separate bowl mix flour, accent and salt. Place cut up okra in the egg and milk mixture. Then take okra out and place in the flour, then fry in coconut oil until golden brown on both sides.

This is from cooks.com, with a few changes.

I don't use MSG so no Accent.

also self-rising flower has little nutritional value.
for real southern flavor, use finely ground corn flour and add some baking soda to it.
you can make corn flower in coffee grinder (electric) in a few seconds. Add 2 tablespoons with 1/4 tsp baking soda, and grind in electric coffee mill.

Okra just tastes it's best with corn flour.
