Makes a great sandwich on pita bread or a salad.
simple luncheon chicken salad with celery and mayonnaise and hard cooked eggs.
2 cups cooked cut-up chicken
1 cup chopped celery
1 tablespoon lemon juice
salt and pepper to taste
1/2 cup mayonnaise, or as desired
2 hard-cooked eggs, chopped
Toss first 5 ingredients together, adding enough mayonnaise to moisten to desired consistency. Fold in chopped eggs. Serve on lettuce leaves and garnish as desired.
Serves 6.
Chicken Salad II
INGREDIENTS
4 skinless, boneless chicken breast halves
4 eggs
1 red apple, diced
3 green onions, chopped
1/2 cup sweet pickle relish
1/2 cup mayonnaise
3 stalks celery, thinly sliced
1 (8 ounce) can pineapple chunks, juice reserved
1/4 cup chopped fresh cilantro
1 cup chopped pecans
fajita seasoning to taste
DIRECTIONS
Bring a large pot of water to a boil. Add chicken and cook until thoroughly cooked and no longer pink inside, approximately 20 minutes. Drain, cool and chop.
Meanwhile, place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.
In a large bowl, mix together the chicken, sliced eggs, apple, onions, relish, mayonnaise, celery, pineapple (with just a little juice for flavor), cilantro, pecans and fajita seasoning to taste.
you can replace the 4 breast with the chicken you already have

FRUITY CHICKEN SALAD
INGREDIENTS:
* 2 cups chicken, cooked, cubed
* 3/4 cup celery, sliced
* 3/4 cup seedless grapes, green, sliced
* 3/4 cup fresh peeled and cubed peaches

* 1/2 cup sour cream

PREPARATION:
In a large bowl, combine chicken, celery, grapes, and peaches; toss gently. Mix mayonnaise and sour cream together and pour over the salad. Add seasoning salt and mix gently.
Easy Chicken Salad
INGREDIENTS
* 6 skinless, boneless chicken breast halves - boiled
* 1 (15 ounce) can mixed vegetables, drained
* 1 (8.75 ounce) can sweet corn
* 1 bunch green onions, chopped
* 1/2 cup mayonnaise
* 1 tablespoon prepared mustard
* salt and pepper to taste
DIRECTIONS
1. Combine the chicken, vegetables, corn, scallions, mayonnaise, mustard, salt and pepper. Mix well. Ready to serve!
This was one of my favorites from Julia Child.
"I marinate all of these in much the same way, in that I first marinate the elements briefly with the seasoning elements to blend flavors, then toss them with only enough mayonnaise to bind them together. This way you are getting splendid flavor and are not overdoing on the sauce. In fact, rather than mixing it in you may well pass the mayonnaise separately, and calorie watchers may slather it on at their own discretion."
Yield: Serving 6 to 8
* 6 cups cooked skinless and boneless chicken or turkey that has been cut into good-size bites, such as rectangles about 1 by 1 1/2 inches and 1/4 inch thick.
* Salt and freshly ground white pepper
* 1 to 2 Tbs excellent light olive oil
* 2 to 3 Tbs freshly squeezed lemon juice
* 1/2 cup chopped fresh parsley
* 1 tsp finely cut tarragon leaves, or 1/4 tsp fragrant dried tarragon
* 1 cup diced tender celery stalks
* 1/2 cup minced scallions or mild onion
* 1 cup chopped walnuts, optional
* 3/4 cup or more of mayonnaise, preferably homemade
* 1 medium head of romaine, washed and dried
Decorative suggestions: 2 hard-boiled eggs, a large handful of fresh parsley, several strips of red pimento
Preliminary seasoning. Toss the chicken or turkey in a big mixing bowl with the salt, pepper, and enough oil to enrobe the meat very lightly. Then toss with the lemon juice, and finally with the herbs, celery, onions, and optional walnuts. Taste analytically, correct seasoning. Let steep 10 minutes, tossing several times.

Oh yes there is alot of ways you can make chicken salad.
My family favorite is with curry.
Cut your chicken into tiny cubes.
Say your left with a cup.
Add 1/2 tsp. Curry
1/2 tsp. Oregano
Dash of Salt and Pepper to taste.
And mayo to moisten.
Depending on how you like it.
Refrigerate.
Now either you can add to a toasted sandwich which We do
with Bacon, Lettuce, Tomato.
Like a tripple decker. Or.
Make some Pasta on the side
Mix it up with the pasta after pasta is cooled and add celery, green onion, fresh peas, tiny cubes of cheese if you like etc....
If you like Curry you will love this, If you have never used it this is a good way to start.
I made this recipe up after I tasted Roti and fell in love with Curry.
Salad:- Lettuce & Chicken
Asparagus.
Beetroot. (sliced)
Carrots. (grated)
Celery. (sliced)
Cheese. (grated)
Chicken. (shredded)
Cucumber. (sliced)
Eggs. (sliced)
Iceberg Lettuce. (shredded)
Spring Onions. (sliced)
Tomato. (wedges)
Salt and pepper to taste, and a nice salad dressing

3/4 cup coarsely chopped celery
toss together

1 T minced onion
1 T minced pickle(or sweet relish)

1/2 Cup coarsely chopped celery
1/2 cup coarsely chopped walnuts(or pecan)
1/2 Cup peeled and diced green apples
S&P to taste...
toss together then add
1/2 mayo
best if made just prior to serving
I just chop the chicken, add mayo and a little dijon mustard to taste, chopped onion and celery (salt and pepper). Some chopped toasted pecans if I have them.
