just for some texture. You don't really need to add it. I usually don't because celery isn't something I keep on hand ... same type of question: why do people add pickle relish to egg salad? yuck

Texture and flavor. Most put some form of Old Bay seasoning in them also, which has either celery seed or celery salt as a main ingredient. Unless you go for homemade, you won't escape it, Brak buddy.

Old bay's number one ingredient is celery salt.
