Can I make chicken and rice in a slow cooker?!

Here are a few favorites:

CROCKPOT CHICKEN AND RICE CASSEROLE

4 chicken breasts
1 can cream of celery soup
1 can cream of chicken soup
1 can cream of mushroom soup
2 stalks celery, diced
1 bay leaf
1 large onion, chopped
1/2 teaspoon Bell's Poultry seasoning
3 cloves garlic, minced
1 cup Minute Rice

Mix the cans of soup with the rice at the bottom of the Crockpot. You may substitute the type of soup you use in any combination (for example: 2 cans cream of chicken soup and one can celery soup).
Add the diced celery, onion, and garlic and stir. Submerge the chicken in the soup.

Turn heat to high for 10 minutes, then reduce to medium and cook for 4-5 hours. Or cook on high for 3-4 hours.
Swiss Steak
1 round steak
2 cans stewed tomatoes
Egg noodles, cooked.

Sear the steak on both sides.
Put in crock pot and sprinkle with a good seasoned salt.
Add the two cans of tomatoes.
Cook all day (8 hours or so).
Serve over cooked and buttered egg noodles.
Yummy!

CROCK POT ENCHILADAS
1 lb. hamburger
1 onion, chopped
1 sm. can chilies
1 sm. can mild enchilada sauce
1 can golden mushroom soup, undiluted
1 can cheddar cheese soup, undiluted
1 can cream of mushroom soup, undiluted
1 can cream of celery soup, undiluted
1 lg. pkg. Dorito chips
Brown hamburger and chopped onion, pour off grease. Put all ingredients in crock pot except Dorito chips. Mix and cook low 4 to 6 hours. Last 15 minutes before you are ready to eat, add Dorito chips and stir.


These are so easy and wonderful. You can’t believe it!

BBQ Ribs

Country Style Ribs
Onion
Bottled BBQ Sauce (any kind you like)

Sear ribs on all sides to seal in juices. Place in crock pot. Cover with sliced onions and BBQ sauce. Cook on low 8-10 hours. Yummy!!!

Serve with baked beans, cornbread…and this salad is great:

Caesar Coleslaw

1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing

Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!

Rice and Beans and Sausage

3 celery ribs, chopped
1 onion, chopped
4 garlic cloves, minced
1 3/4 cups V8 juice (or tomato juice)
2 16 oz. cans kidney beans, drained
3/4 tsp dried oregano
3/4 tsp. dried thyme
1/2-3/4 tsp. red pepper flakes (less if you don't like spicy)
1/2 tsp pepper
2 lb. fully cooked smoked kielbasa cut into 1/4 inch slices.
4 cups cooked rice

Combine all ingredients except rice in slow cooker. Cover. Cook on low 4-6 hours. Serve over rice. Yummy!!

Slow-Cooked Fish and Shellfish with Tomatoes and Parsley

* 6 plum tomatoes, cut into small dice (or one large can of plum tomatoes, liquid drained)
* Coarse salt
* Freshly ground black pepper
* Sugar
* 2 tablespoons olive oil
* 1 large leek sliced, white only
* 3 cloves garlic, peeled and sliced
* 2 tablespoons tomato paste
* 2 cups dry white wine
* 1/4 cup white vinegar
* 1 quart store-bought, reduced-sodium chicken broth, vegetable broth or homemade
* Pinch of saffron threads
* 12 small clams, cleaned and scrubbed
* 12 mussels, scrubbed and debearded
* 6 large scallops
* 20 ounces cod or snapper or bass, cut into 1-inch cubes
* 8 medium shrimp, preferably head on, shelled, deveined, and butterflied
* 3 cups small pasta cooked (orzo, riso, or pastina )
* 2 tablespoons chopped fresh flat-leaf parsley leaves

1. Thirty minutes before you want to cook, put the tomatoes in a bowl and season with salt, pepper and a pinch of sugar. Set aside.

2. Heat the olive oil in a wide, deep pot or slow cooker over medium-high heat until hot but not smoking. Add the leeks and garlic and saute until softened but not browned. Add the reserved tomato and tomato paste and cook, stirring until the ingredients are well incorporated.

3. Add the wine and simmer, scraping up any bits stuck onto the bottom of the pot, until it reduces. Add the broth and saffron; bring the liquid to a simmer. Taste and adjust the seasoning if necessary.

4. Simmer anywhere from 4 minutes to 4 hours.

5. About 5-10 minutes before you are ready to serve, add the clams and mussels to the pot and carefully immerse them in the liquid. Allow the clams and mussels to cook for about a minute. Season the scallops and fish with salt and pepper and carefully add them to the pot. Place the shrimp in the liquid, pushing them gently under the surface of the liquid.

6. Simmer for 3-4 minutes or until the shellfish have popped open, the fish flakes with pressure and the scallops and shrimp are opaque and firm to the touch.

7. Add the cooked pasta and allow to heat through for an additional minute or so. Sprinkle with parsley and serve.

8. Serving suggestions: Serve in individual deep bowls or family style. Toasted croutons and roasted garlic mayonnaise are nice accompaniments.

yes that should work out just fine for you. just make sure the chicken is totally defrosted before you put it in. Enjoy!

Personally I didn't like fish cooked in the slow cooker..it was kinda mushy..but I love this recipe for chicken and rice. I also add chopped musrooms.
INGREDIENTS
4 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
1 cup white rice



DIRECTIONS
Cut chicken breasts into large chunks.
Place the chicken breasts, cream of chicken soup, cream of mushroom soup, cream of celery soup and the rice in a slow cooker. Cook on high for 3 hours or low for 4 hours.

Chicken and Rice for the Slow Cooker

6 medium chicken breasts
salt
pepper
1/2 t. dried thyme
1/2 t. basil
1/2 cup chicken broth or white wine
1 condensed cream of chicken soup (10 oz)
1 can sliced mushrooms, drained (4 oz.)
1 cup sour cream
1 T. diced pimiento (opt)

Put chicken breasts, seasoned with salt and pepper and herbs into crock pot.
Mix wine or broth, mushrooms, soup, and pour over chicken. Cover and cook. Last
1/2 hour, add sour cream and pimientos. Serve chicken with sauce on bed of
rice. Cooking time: 6-8 hours on low or 2&1/2-3&1/2 hours on high.
