Easy cupcakes for a 7 yr old birthday?!


Question: I am looking for a cute and yummy cupcake recipe to make for my sons class for his b-day. I dont really want to do it from scratch so something with a box mix would be nice, I guess Im looking for ideas to make them special!

Here are a few cupcake decorating ideas:

Board Game Cupckaes: Make cupcakes from a mix, as directed on the package (your choice of flavor). Frost with your choice of icing. Food coloring can make vanilla frosting any color you like. Using tube frosting, make a tic-tac-toe board on each cupcake and include mini candy pieces for a board game effect...

Surprise Cupcakes: Make cupcakes from a mix, but add a mini candybar to each one before you bake them. Frost with a icing that complements the candy...i.e. peanut butter frosting on chocolate cupcakes with a mini peanut butter cup inside or top vanilla icing with mini m&m's and put regular sized m&m's inside.

Clown Cupcakes: Make cupcake batter and bake inside sugar cones (the pointy kind). You will need to put a sheet of heavy duty tin foil tightly over a 9x13 baking dish and then poke a small hole for the cones to fit in. The heavy duty tin foil will hold the cones upright. Fill with batter about 2/3 full and bake as usual. You want the cupcakes to rise above the top of the cone enough to make a face. When the cupcakes are cooled, turn the cupcakes upside down and ice the cone to look like a clown hat and ice the cupcake to look like a clown face. These are time consuming but easy and really special.

If you want an easy alternative to cupcakes:

Dirt Cups: chocolate pudding poured into disposable cups. Top with crushed oreos and stick a couple of gummy worms into each one.

Fish in a Bowl: Make blue jello into disposable clear cups. When the jello has just started to set, place a few gummy fish into each cup and refrigerate until firm.

Ingredients? 2 1/4 cups all purpose flour
? 1 1/3 cups sugar
? 3 teaspoons baking powder
? 1/2 teaspoon salt
? 1/2 cup shortening
? 1 cup milk
? 1 teaspoon vanilla
? 2 large eggs


Easy Cupcake Recipe DirectionsPreheat oven to 350 degrees. Line cupcake pans with paper liners.

Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add shortening, milk, and vanilla. Beat for 1 minute on medium speed. Scrape side of bowl with a spatula.

Add eggs to the mixture. Beat for 1 minute on medium speed. Scrape bowl again. Beat on high speed for 1 minute 30 seconds until well mixed.

Spoon cupcake batter into paper liners until 1/2 to 2/3 full.

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

Cool 5 minutes in pans then remove and place on wire racks to cool completely.

Once cupcakes are completely cooled, frost with your favorite frosting recipe or decorate as you desire.

I think icecream cupcakes would be good. You can find tons of recipes online.
But pretty much all you do is pour the cake batter into ice cream cones, bake them, let them cool and frost.

They are really fun, and it would be something different.

Makes 24 mini cakes or 12 larger ones.

For mini cakes you will need a 12 hole tartlet tin (these are 5cm at the rim and 1 1/2 cm deep) and you will need to use it twice. For larger cakes use a 12-hole bun tin (these are 6 1/2 cm at the rim and 2cm deep). You can use the little paper cases according to the size tin you have. If not, butter the base and sides of the holes before filling with the mixture.

125g / 4 1/2 oz softened butter
125g / 4 1/2 oz caster sugar
2 eggs, lightly beaten
1 tsp vanilla extract
125g / 4 1/2 oz self-raising flour
2 tbsp milk

Preheat the oven to 190C/375F/Gas mark 5. Either butter the tin or place the paper cases in the holes (see above). In a mixing bowl beat the butter and sugar until pale and fluffy. You can use an electric whisk or a wooden spoon.
Add the beaten egg, a little at a time, whisking to incorporate, then beat in the vanilla.
Sift in half of the flour and fold into the mixture. Add the milk and the rest of the flour and fold until well combined.
Spoon into the tin and bake for 12 minutes or until risen and golden on top. Allow to cool for ten minutes on a rack before removing from the tin.

Well, i would do something new for a class b-day. maybe buy one of those frozen cookies..... the ones you just pop in the oven. put them in a cupcake tray, this should make the cookies in a cupcake shape. Then, when it is finished, just put some frosting on.

buy a box of Pillsbury FunFetti cake mix. it is sooo good! it is a vanilla cake with little bits of candy mixed in to it. Just make the batter how it says to on the back of the box, and pour those in to your cupcake pan. You can also buy Pillsbury FunFetti frosting too to put on them after you bake them. Your son will love them!

use any boxed yellow cake mix- buy cake cones (the type for ice cream)- fill the cones about 2/3 way up with batter- bake as you would cup cake (put the cones in a muffin/ cup cake pan to make sure they dont spill). Top with colored frosting.

this is easy. use yellow cake mix. bake the cupcakes. fill them with vanilla pudding and top with chocolate frosting. it will taste like a Boston Creme Cake.


now if you want a show stopper here it is and I have done this and people were hounding me asking me how I did it and how great it tasted. it is so easy.

take vanilla cake mix.. or white if you cant find it. bake the cupcakes. frost with cream cheese frosting spiked with vanilla extract. then dip a whole strawberry stem and all in strawberry glaze. it is in grocery stores by the strawberries and shortcakes..after you dip them in that set it on wax paper for a few seconds to drip off the excess and top the cupcake with this. the berries get so shiny with the red green from the stem and white. you wont be disappointed.

You might try baking the cake mix in ice cream cones. Fill the cones with batter a little above the widest part of the cone and use the baking time on the box as a guide. You could take bowls of toppings to school and let the kids "frost" their own by dipping them into Cool Whip or chocolate sauce and then into dry sprinkles - candy toppings, crushed dry cereals, nuts, granola...whatever. I'd check with the teacher first for an appropriate time because this would take a bit longer to do than just passing out a cupcake or candy bar.
