Turkey for Easter, side dishes?!
Answers: I'm cooking a turkey for easter dinner... what should i make with it that wont be the same as thanksgiving?
Asparagus,just steam it for 2 min. keep it a little crunchy yumo!!

Carrot Souffle'
INGREDIENTS
* 2 pounds carrots, chopped
* 1/2 cup melted butter
* 1 cup white sugar
* 3 tablespoons all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon vanilla extract
* 3 eggs, beaten
* 1 teaspoon confectioners' sugar for dusting
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Bring a large pot of salted water to a boil. Add carrots and cook until tender, about 15 minutes. Drain and mash. To the carrots add melted butter, white sugar, flour, baking powder, vanilla extract and eggs. Mix well and transfer to a 2 quart casserole dish. Sprinkle with confectioners' sugar.
3. Bake in preheated oven for 30 minutes.
This recipe became a family favorite overnight!! I followed other reviewers' suggestions and used only half a cup of sugar instead of a full cup. I was the only one at the table that thought it was still a bit too sweet. Of course I use Splenda instead of real sugar because I hate to substitute real butter. The sugar and eggs masked the taste of the carrots almost completely, in my opinion, so I may use less of those in future attempts. I boiled the carrots for about 30 minutes instead of 15 - they were very easy to mash. All in all, this one's a keeper!
After all Easter is all about carrot's and jelly beans! We are smoking a turkey breast for Easter also! Got to love that Turkey!

Think Spring,,,tossed lettuce salad with a variety of dressings on a side bar,,,i would add sliced radishes, purple onion or cabbage for color,,shredded carrots , toss together,,,
a pasta spring salad with macaroni noodles, tomatoes, red onion, celery, radishes and shredded carrots with a ranch dressing to pull it all together
colored eggs for a centerpiece also an offering to be eaten
broccoli, cauliflower, carrot medley,,raw for your veggie tray with ranch
a pea salad using frozen peas, thawed, about 4 hard boiled eggs, cubes of cheese, and a little more than a small onion diced rather fine,,,ranch to hold this together
fruit pizza for dessert,using sugar cookie dough spread out in a pizza pan and baked,,,top this when cool with cream cheese, a little lemon juice and powdered sugar to make a smooth spread, put this over the cooled cookie,,,you can make these individual if you like instead of one big cookie,,then use such as kiwi fruit sliced, strawberries sliced, peaches sliced, pears sliced and such things to make a really pretty pizza.. you may warm up the spread in the microwave and drizzle over the top,,,refrigerate until firm either serve individual or slice as pizza if one big cookie,,,

Make deserts and have mash potatoes ,maybe Pot Roast with carrots and potatoes and then cooked it .instead of turkey. then cook green beans and rolls

PASTA SALAD:
1 Bag spiral pasta (12-16 oz) (cooked al dente, rinsed and drained in cold water)
2 Carrots (shredded)
1 Medium Green Pepper (chopped)
1 Medium Onion (chopped)
1/2 Can Sweetened Condensed Milk
1 Cup Miracle Whip
Salt and Pepper
Combine all and chill for about 2 hours. I make this every holiday and bbq/party!!
Steamed baby carrots, creamed corn, and home made mashed potatoes.
You see, on Thanksgiving we have Turkey with stuffing, whole corn, peas, asparagus, yams, and mashed potatoes.. So if you're like us, you can switch it up by adding steamed baby carrots to the mix and instead of whole corn, have creamed. Also, mashed potatoes always go well with turkey, especially with turkey gravey on top.
