Easter recipe ideas? I want something different?!


Question: Here's a really yummy side dish:

Best Fancy Mashed Potatoes
5 lb mashed potatoes peeled, cooked
1 stick real butter
8 oz cream cheese
8 oz sour cream
Half and half
salt and pepper
1/2 to 1 cup shredded sharp cheese

Mash potatoes with the butter and a little half and half. Add the rest of ingredients, except cheese, and continue to mash until cream cheese is melted and potatoes are fluffy. Put in casserole dish and cover with sharp cheese. Bake at 350 until cheese is melted and heated through.

Very rich, but wonderful!!

so simple, so good!

We are doing leg of lamb, marinated in a combination of orange juice, pomegranite juice, white wine, olive oil, rosemary, garlic, onion and thyme (blended in a blender). We have stabbed the leg repeatedly with a fork so the marinade will penetrate the meat, put the whole thing in a big bag and are marinating it for a day before roasting it tomorrow in the oven.
This is being served with asparagus braised in butter with carmelized onions and Mrs. Dash, and biscuits. Gravy is being made from the marinade.

This is sweet and delicious. You or your guest will never know you are eating carrots!

Carrot Souffle'

INGREDIENTS

* 2 pounds carrots, chopped
* 1/2 cup melted butter
* 1 cup white sugar
* 3 tablespoons all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon vanilla extract
* 3 eggs, beaten
* 1 teaspoon confectioners' sugar for dusting

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Bring a large pot of salted water to a boil. Add carrots and cook until tender, about 15 minutes. Drain and mash. To the carrots add melted butter, white sugar, flour, baking powder, vanilla extract and eggs. Mix well and transfer to a 2 quart casserole dish. Sprinkle with confectioners' sugar.
3. Bake in preheated oven for 30 minutes.

It is spring - strawberry spinach salad with poppyseed dressing.

It's a red velvet cake with creamcheese icing and it's soooooo good, it's always a Big hit at my house!!
