How can I make a snack using asparagus and proscuto? Thanks!?!


Question: Asparagi Fritti Al Prosciutto

16 Fat asparagus spears
- washed and trimmed
- (See NOTE)
1 ts Salt
6 tb Butter
2 Eggs; beaten together
Flour; for dredging
16 sm Slices prosciutto
1 tb Cooking oil

COOK ASPARAGUS IN BOILING salted water until barely tender, about 10
minutes. Drain in a colander, spray with cold water, and pat dry. Lay
asparagus out on a platter. Melt 3 tablespoons of butter and drizzle it
over asparagus spears. Put beaten eggs on one plate and flour for dredging
on another. Heat remaining butter and oil in a skillet. Wrap each asparagus
spear in a slice of prosciutto. Roll them in flour (brush off excess), dip
in egg, and saute them until golden, about 2 minutes to a side. Drain on
paper towels and serve hot. NOTE: If there are no fat asparagus, use twice
as many skinny ones; cook a few minutes less and roll 2 spears in each
slice of prosciutto.

Wrap the prosciutto around the asparagus, put pepper, salt and maybe a little oil and put in the oven to bake for 10 minutes or so, delicious. Or you can just cook the asparagus and wrap them with the prosciutto after you have cooked the asparagus, either way is good.

1 pound asparagus (about 19 stalks), trimmed
1 tablespoon olive oil
Salt and freshly ground black pepper
6 to 8 paper-thin slices prosciutto, halved lengthwise

Preheat the oven to 400 degrees F.
Snap the dry stem ends off of each asparagus and place on a heavy baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss. Roast until the asparagus is tender, about 15 minutes. Cool completely.

Wrap each asparagus with 1 piece (about 1/2 a slice) of prosciutto, exposing tips. Arrange on a platter and serve at room temperature.

The above sound dry to me. Use some kind of mild white cheese like provolone or a dab of cream cheese in the center before you roll it up...I always blanch it first in boiling salted water---drain and then either spread with cream cheese and toothpick---and serve cold as an appetizer. or broil with a piece of provolone inside the roll (quickly) and serve hot. Do not season with pepper unless its just on the asparagus...you paid a lot of money for that proscuitto's flavor!

I wrap the prucsiutto around a stalk of asparagus and pop it onto the grill until its crispy, umm soo yummy
