How to Stick Cake Layers Together?!
It's more of a coffee cake, so I don't want to frost it. Is there any way I can get the two layers to stick together without using traditional frosting?
Answers: I just baked a cake... I didn't have a thick enough pan, so I did two layers (9-inch pans). I thought I could get away with one layer (and keep one), but it looks a bit flat.

Make a thin glaze: start with about 1/2 c. powdered sugar, and whisk in some juice or water (orange juice might be good) 1 tb. at a time, until it's thin spreading consistency... you can also substitute liqueur (Triple Sec, Brandy). This is the glaze that I put over all my breads (like banana) and bundt cakes. It adds a little "zing", and some shine to the top, but isn't really frosting
A great way to do that since its a coffee cake is to use the crumb topping, and just moisten it a bit more than you usually would :) Hope its good!
I would say maybe whipped cream between the two layers, or in a pinch egg white might hold it together.
warm some honey and spread on layer to stick them together.
Jam or Lemon, Lime, Orange Curd are quite common for this purpose. That is what is often used in cakes with Fondant Icing.
Preserves will work but only if the fruit is very small.
put a little frosting on top of the bottom layer,and then put the other on top, and then you'll have your layered cake!!!!

yeah use cool whip or some sweetened cream cheese..
Since these are coffee cakes I would either serve them separately or paint (with a pastry brush) plain corn syrup on one layer and put the other layer on top. They should stick together fairly well. You can always use a couple of toothpicks to secure them as well.
