I need a really tastey recipe for Egg Salad Sandwich?!

Egg Salad Sandwich with Avocado and Watercress
6 eggs
1/4 cup mayonnaise, plus extra, if you like, for spreading
1 teaspoon Dijon mustard
1/2 lemon, juiced
Salt and freshly ground black pepper
8 slices whole grain bread, toasted
1 avocado, halved, peeled, seeded and sliced lengthwise
1/2 bunch watercress, stems trimmed
Cook the eggs 10 minutes in a saucepan of simmering water to cover. Drain, cool under cold running water, and peel. Roughly mash the eggs in a bowl with the mayonnaise, mustard, and lemon juice. Season with salt and pepper.
Spread 4 slices of toast with mayonnaise, if you like. Arrange about 1/4 of the avocado slices on each. Spread each with 1/4 of the egg salad and arrange watercress sprigs on top. Top each sandwich with another slice of toast and serve.
boil eggs, chop preserved jalapenos, when the eggs are ready, peel the sheel and mush up the boiled egg add mayo to taste, red and green jalapeno some paprike red cile powder tomato (*choped*) onion and there you go and of course the bread any kind you please
Egg Salad Sandwich- serves 1
Ingredients:
1 Hard-boiled egg
1 ts Mayonnaise
Any of these following
Additional ingredients
1/4 ts Mustard
1 tb Chicken shredded, ham or
Other meat
1 tb Avocado mashed
1 ts Onion minced
shredded Carrot, cucumber, mushroom,
Red or green pepper or
Tomato
1/2 ts Pickle relish
1 Lettuce or spinach leaf
2 slice Toast or thick bread
Instructions:
NOTE: Eggs spoil easily, so if you child wants an egg salad sandwich for lunch, pack with it in a lunch box with a freezer pack.
Separate the yolk from the egg white, Mash the yolk in a small bowl with mayonnaise and/or yogurt, adding more mayo and/or yogurt if needed.
Chop up the egg white.
Mix it and any of the additional ingredients (except the lettuce or spinach) into the egg mixture.
Spread the egg salad on toast or thick bread.
If you like, add a lettuce or spinach before closing the sandwich
I have always used dill relish and a little mustard and mayonaise and salt and pepper with a bit of bacon bits it is really a good flavor if you use the smokey bacon bits in the salad Isle.
Boiled chopped eggs, some diced pickles, mayo, celery, salt and pepper.
Here's one that I had never heard of before, but tried it and actually became one of my favorites:
Sweet Potato Salad
1 large can sweet potatoes
2 hard boiled eggs, diced (I like 5 eggs)
1 dill pickle, diced
1 small onion, diced
2 celery stalks, diced
1 cup mayonnaise
1 tablespoons, spicy brown mustard
1 teaspoon lemon juice
salt and pepper to taste.
Drain sweet potatoes (discard any stringy pieces); mash into an even consistency. Add diced eggs, pickle, onion and celery and stir. Mix mayonnaise, mustard and lemon juice. Stir all ingredients together and refrigerate for 1 hour.
You can eat this like a salad, in a sandwich or in a wrap. Even try spreading it on a tortilla, roll it up, wrap it in plastic overnight, and then cut it into slices for appetizers.
