What to make for Easter dinner?!
I don't have time to go through ALL the fixin's. But I want to make it special, can someone help me?

How about some sort of casserole? We are having a big dinner with more than 10 people. They are having ham and fixings... however, I don't eat ham and there are vegetarians there... so I am making a baked ziti.
If you do something like ziti, you don't need a bunch of sides -- although a veggie might be nice. Happy Easter!
I don't know where you are located, but most super markets make a ready to serve meal or call your favorite restaurants and place an order to go, , pick a cake and you are set.

We are having a honey baked ham, smashed potatoes, a sweet potato casserole, steamed whole green beans, rolls, lime jello salad and for dessert a coconut cake.
But you could always make cherry glazed chicken breasts and some quick and easy sides and veggies.
My partner likes it when I make him cherry glazed chicken breasts, smashed potatoes and a veggie.
Cherry glazed chicken breasts:
1 can cherry pie filling
4-6 boneless chicken breasts
Heat oven to 350 degrees F. Place the chicken breasts in a glass baking pan that has been sprayed with a non-stick cooking spray like Pam. Spoon just enough of the cherry pie filling over the chicken to cover lightly. Place pan into oven and cook for 1 hour and 15 minutes spreading more of the pie filling over the chicken every 15 minutes.
This is very easy and you get a nice moist chicken breast. This also works for Cornish game hens.
Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots.
Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

I got a ham to fix for dinner with all the trimmings but before I got it in the oven my sister called to invite us to her house for dinner so I put the ham in the fridg and away we went. It is too late now to fix dinner since you probably already came up with something. Maybe you should be thinking about tomorrow's meal and you won't have to come up with something at the last minute.
