Scalloped potatoes?!


Question: I making scalloped potatoes today, and I have heard that you should par bake the potatoes by boiling them. It makes sense because it seems like the middle never gets cooked. What do you guys think? Thanks!

I never do that. I slice very thin and I cook them at a lower temp for longer w/foil or lid on, then I take off the lid or foil for the last half hour to brown the top a bit. Your way sounds like more work. Good luck!

it might make the potatoes more mashed then like chips...i would just make sure you cut them thinly.

The secret is to slice them very thin. Then they will cook, and don't cover them.

I like to blanch mine first - just place in boiling water for a minute or two, drain, and then continue on with your recipe. I find this cuts down the cooking time of scalloped potatoes immensely and they always turn out great!

no- but you can speed up the process by cooking it half way thru in the microwave-boiling them will make them absorb some of the water and ruin the creamy texture of your dish when it releases in the baking!

I agree with some of the others. I wouldn't boil them. I think it will get too mushy that way. I think slicing it really thin is the way to go.
