Mashed potatoes or scalloped potatoes. Or Au Gratin potatoes.

mashed potatoes are easy to make

Au gratin potatoes.

Mashed potatoes or even Baked potatoes

Au Gratin or scalloped.

Smashed potatoes (mashed, but a bit lumpy.. love 'em this way) mixed with a bit of sour cream, a splash of half and half (if you choose), and roasted garlic. The sour cream and half and half will give your potatoes a very pleasing texture, and it just makes mashed potatoes taste all-around better and richer. This side is very satisfying, and the garlic compliments the sweetness of the ham perfectly. I use minced garlic freshly seared in a pan with butter. You'll have everyone asking you how you made them!

scalloped potatoes

German potato salad (it is warm). Look for recipe on web.
I have one for making it crock pot, but is not readily available.

Try a tator tot casserole!
2 cups of tator tots, one can of cream of celery soup(healthy choice) 1 cup of sour cream and one cup of shredded sharp cheese. Bake in a glass baking dish at 400 for 45 minutes.

For me I would choose something really simple such as Minted New Potatoes:

or. perhaps Twice Baked Potatoes:

We're thinking about one of these two:

Cheesy Hashbrown Casserole

32 oz frozen hash browns
? cup margarine
8 oz Velveeta cheese
1 can cream of mushroom soup
? small onion, diced
16 oz. sour cream
Salt and pepper to taste
2 cups crushed corn flakes

Preheat oven to 350. Combine first 7 ingredients and spread into a greased casserole dish. Top with crushed corn flakes. Bake 45 minutes.

You can make this one even easier. Use the deli mashed potatoes or the ones found in the freezer... they are almost as good as home mashed.

Best Fancy Mashed Potatoes
5 lb mashed potatoes peeled, cooked
1 stick real butter
8 oz cream cheese
8 oz sour cream
Half and half
salt and pepper
1/2 to 1 cup shredded sharp cheese

Mash potatoes with the butter and a little half and half. Add the rest of ingredients, except cheese, and continue to mash until cream cheese is melted and potatoes are fluffy. Put in casserole dish and cover with sharp cheese. Bake at 350 until cheese is melted and heated through.

Very rich, but wonderful!!

Enjoy!

Au Gratin Potatoes:

Preheat oven to 400 degrees F.

Butter the inside of a casserole dish. Peel and slice 4 large potatoes and layer into pan. (Slice an onion in there too of you want.)

In a saucepan on medium heat, melt three Tbsp butter. Mix in 3 Tbsp flour and 1/2 tsp salt and stir with a whisk for one minute. Add one cup milk and cook until sauce thickens. Add 1.5 cups shredded cheddar cheese and stir about one minute until melted completely.

Pour sauce over potatoes, cover with aluminum foil, and bake 1.5 hours.

Take a bag of Frozen southern style square potatoes, 8oz sour cream, 1 stick of melted butter, 1 can of cream of chicken, 1 bag of shredded cheddar cheese - mix all together and put in oven for 1 hour at 375! Add cheese to top the the last 10 minutes of baking, and put back in!

Roasted yams - cut in wedges tossed in a bag in olive oil and some fresh thyme (or dried leafy spices..parsley and/or oregano) S & P

Spread out on a cookie sheet and roast while you are cooking your ham...Shake every now and then... take out early if they are looking just right. Enjoy.

If you want to use regular potatoes do the same thing but use rosemary instead.

We serve this for all our gatherings...any kind of soup works.I use cream of mushroom...
