If you want to do something really good, I love Eggs Benedict.. It's very simple for a full dish, but at the same time, sophisticated and delicious as a meal. You'll have a new favorite food!

INGREDIENTS NEEDED:
-Water
-1/2 cup distilled vinegar, divided
-12 large eggs
-1 tablespoon unsalted butter
-12 slices Canadian bacon or thickly cut ham
-6 plain English muffins, split
-Hollandaise Sauce
-1 tablespoon finely chopped fresh chives or finely chopped -fresh flat-leaf parsley leaves

DIRECTIONS:
Pour enough water into 2 large skillets to reach a depth of about 3 inches, and divide the vinegar between them. Bring both skillets to a gentle simmer over medium heat. Crack an egg into a cup and carefully slide it into the hot poaching liquid. Quickly repeat with all the eggs. Poach the eggs, turning them occasionally with a spoon, until the whites are firm, or to the desired degree of doneness, about 3 to 5 minutes. Using a slotted spoon, remove the eggs and transfer to a kitchen towel. Lightly dab the eggs with the towel to remove any excess water.
While the eggs are poaching, melt the butter in a large skillet over medium heat. Add the Canadian bacon and cook until heated through, about a minute on each side.
To serve, toast the English muffin halves and divide them among 6 warmed plates. Top each half with a slice of Canadian bacon, and set an egg on top. Spoon the hollandaise sauce over the eggs and garnish with the chives. Serve immediately.

To make the Hollandaise sauce, you can buy a mix at the grocery store for very cheap. I believe Hormel makes one. It comes out awesome every time, and the instructions are extremely easy. All you need is milk and butter with the inside contents of the package on the stove top!

Eggs with Hats on Top
10 min | 5 min prep | SERVES 2

Ingredients
2 eggs
2 slices white bread
2 tablespoons butter


Directions
1With drinking glass turned upside down cut a hole in the center of your bread slices.
2Save the circle you cut out of the center of the bread.
3In frying pan over medium high heat, melt butter.
4Put bread slices in skillet along with the circles you cut out of the center of the bread.
5Crack an egg in each of the holes of bread.
6Cover skillet for a minute or two or just until egg is starting to set up, and when bottom of bread is browned, then turn and fry on other side until browned.
7Make sure you turn your little circles of bread over also.
8Serve with your little circles of bread on top of the egg.
9Season to taste.

I don't know if this is for Easter or not but my favorite egg recipe would be two eggs whisked
some garlic salt
and piece of cheese

you'll have yourself a cheesy omelet!

However this morning i made my omelet with two eggs and french onion laughing cow cheese...it was SOOOOOO Delicious!

scrambled, easiest. I use for (just me) 1 serving...2 eggs, a dash of milk, whip and throw it in the frying pan (lightly greased, i use pam)
boiled, easy.
Really, alll your choices are pretty dang easy.
for easter, color some boiled eggs.

mayo, dijon mustard, a little crushed red pepper, a splash of heavy cream, or half and half, salt, pepper, and paprika for appeal, yum, I make these almost daily, I follow the atkins diet, so this is perfect, and no carbs! or scrambled eggs with sharp cheddar cheese, and ham, salt, pepper.

1. Take an egg.
2. Heat it.
3. Eat it.

You can always skip #2. What could be simpler?

I love egg salad:

Boil 6 or more eggs. (I have an egg cooker, it cooks perfect eggs everytime). If you don't, here are the instructions:

Put eggs in saucepan. Cover with cold water until an inch above eggs. Cook on medium heat until boiling. Reduce heat to low, and simmer 10-12 minutes. Fill pan with cold water until eggs are cool. Peel.

Cut up or mash eggs in a bowl. Add a heaping tablespoon of mayo or Miracle Whip until nice and creamy. Add salt and pepper to taste. A little dab of yellow mustard is good, too. Spread on your favorite bread!

It's very simple but delicious!!

Spinach-Bacon Salad

1 8oz pkg. spinach
3 hard boiled eggs
8 mushroom caps, sliced
Toasted slivered almonds (optional)

Combine all ingredients and serve with Hot Bacon Dressing.

Hot Bacon Dressing

? lb. bacon, chopped
1 cup sugar
1 1/3 cups white vinegar
5 tsp. cornstarch

Fry bacon until crisp, drain and leave bacon drippings in skillet. Add sugar and vinegar to skillet and stir well. Add 1 cup water and bring to a boil. Mix cornstarch with 2/3 cup water, stir until it dissolves and pour into skillet with dressing. Return to boil and simmer for 5 minutes. Remove from heat, return bacon to skillet and toss dressing into salad.

Bacon Cheddar Egg salad
Add cheese and it gives extra flavor and texture. Bacon adds more and gives more filling salad

5-6 eggs, hard boiled, chopped
1/2 cup mayonnaise
4 slices bacon, crumbled
1/2 cup finely shredded Cheddar cheese
1 tablespoon mustard
Mix all together and enjoy!

Deviled eggs:

INGREDIENTS:
6 hard-boiled eggs
2 Tbsp minced sweet onion
2 tsp sweet pickle relish, minced
1 Tbsp mayonnaise
2 tsp creamed horseradish sauce (found in deli section)
2 tsp yellow mustard
Salt to taste
Garnishes: paprika, olives, chives, parsley, and/or pimento
PREPARATION:
Slice hard-boiled eggs in half lengthwise. Remove egg yolks to a bowl, and set egg whites aside. Mash the egg yolks until crumbly. Add sweet onion, pickle relish, mayonnaise, horseradish sauce, mustard, and salt to taste.
Pipe or spoon into egg white halves. Garnish with paprika, olives, chives, parsley, and/or pimento. Chill before serving.

4 to 6 servings

deviled eggs......................6 hard boiled eggs, 3 tablespoons of mayonaise, 1teaspoon sugar, 1teaspoon mustard, 1tbs vinegar,salt and peper, paprika -optional remove shell from eggs and half lenghtwise, carefullt remove yolk, mash and add remaining ingredients, spoon carefully into the egg whites and garnish with paprika. enjoy

Saute chopped onions, bell peppers and tomatoes in butter till the onions turn translucent. Set aside. Beat eggs and pour into a non-stick pan. Cook moving the mixture about so that the eggs cook evenly. Put the vegetable mixture in the center and add chopped cheese. Fold the egg over making an omelette
