What is the secret to your perfect potato salad?!?!


Question: I can't think of one universally paletable recipe that has more variables and specialties in a family recipe! It's always fun at picnics because everyone's own grandmother makes it the best and you never taste two that are the same!

For a great potato salad you have to have 1 main ingredient, LOVE. Love makes anything great.

My grandmother always made whipped potato salad. When I found out that others used potato chunks I was under the impression that they didnt do it right. I was like that for most of my life. I'm like, well, they didnt cook it right, but I'm going to eat it anyway.

as long as it doesn't have mayo, I'm so down for it. mayo=yucky, I don't care for yucky. I prefer a mellow vinaigrette for the al dente new potatoes with fresh herbs to accompany. MMM...potato salad (with no mayo) ....

INGREDIENTS:
1 1/2 cup mayonnaise
2 tablespoons vinegar
1 1/2 teaspoons salt
1 teaspoon sugar
5 to 5 med. potatoes, peeled, cubed, cooked
1 cup sliced celery
1/2 cup chopped onion
3 eggs, hard-boiled
1 cup shredded chedder
1 to 2 Tbs chopped green onions, optional garnish
1 tomato, cut in wedges, optional garnish

PREPARATION:
Combine mayonnaise, vinegar, salt, sugar, and pepper in a large bowl. Add remaining ingredients; toss gently to combine well. Cover; chill for 2 or more hours for best flavor. Garnish with chopped green onion and tomato wedges if desired

A mashed potato salad recipe.

INGREDIENTS:
6 cups hot mashed potatoes
1/2 cup chopped celery
1 1/2 cup salad dressing (Miracle Whip)
1/2 cup minced onion
1/2 cup heavy cream
1/4 cup vinegar
1 tablespoon dry mustard
salt and pepper to taste
paprika
green bell pepper rings

PREPARATION:
combine hot mashed potatoes with celery, salad dressing, onion, cream, vinegar, and mustard. Salt and pepper to taste and garnish mashed potato salad with a sprinkling of paprika and bell pepper rings

This German potato salad includes diced potatoes, bacon, hard cooked eggs, vinegar, and green onions.
INGREDIENTS:

16 slices bacon
2 sliced hard cooked eggs
6 cups hot diced cooked potatoes
3 tablespoons granulated sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1/3 cup vinegar
3/4 cup water
2 tablespoons sliced green onions
chopped parsley for garnish

PREPARATION:
Dice 6 slices of the bacon. Fry diced bacon along with the 6 whole slices in a heavy skillet. Remove whole slices to drain on paper towels; set aside.
Combine sugar, cornstarch, salt, vinegar, and water; slowly add to diced bacon and bacon grease in the skillet, cooking and stirring constantly over medium heat until thickened

My grandmother made her "special" Homemade Dressing for potato salad. It only takes a few minutes to make the dressing, which is the secret to this potato salad's wonderful flavor.

Ingredients:
6 to 8 medium potatoes, peeled, cooked, drained and diced (5 cups diced potatoes)
1 tablespoons fresh minced parsley
3 tablespoons pickle relish, drained
3 tablespoons finely minced onion
Homemade Dressing

After draining diced potatoes, mash some of them with a fork or potato masher. Add parsley, relish and onion to potatoes. Pour half of the dressing over potato mixture and stir until well mixed. Add more dressing if needed and refrigerate any remaining dressing. If desired, add salt and pepper to taste.
Serve potato salad cold or at room temperature. Store in refrigerator.

VARIATION: Add 2 boiled eggs, diced or grated

Homemade Dressing:
2 tablespoons flour 1/2 cup vinegar
1/4 cup sugar 1/2 cup water
1 teaspoon dry mustard 1 egg, beaten
1 teaspoon salt 1/2 teaspoon pepper (optional)

Mix flour, sugar, dry mustard and salt together in a saucepan. Then gradually add water, vinegar and egg, stirring with a wire whisk. Heat on medium heat, stirring constantly until sauce thickens to the consistency of mayonnaise.

Use as dressing for potato salad or refrigerate until needed. This keeps for up to 5 days.

My family likes all kinds of stuff in PS. Besides potatoes, I always put a diced tomato, shredded onion, radish, carrot, celery, pickle, cucumber, and some peas. The dressing I make is mayo, salt, pepper, prepared mustard, a tiny bit of sugar, a bit of vinegar, and a bit of cream. I always get rave reviews on my salad.

I add parsley, green onion and black olives to my potato salad..... I make the vinaigrette with dijon mustard, white vinegar and olive oil.

I like to add extra hard boiled eggs to my potatos salald. I like love to dip the eggs in the dressing first!!!

If I'm making potato sald to share with other peole I add pickles and onions in large pieces so that I can see them and pick them out. But other than those ingrdiants I make my dressing out of mayo, regular prepared mustard, dill weed, and even though don't like pickles a little dribble of pickle juice make the dressing just right.

I tried another recipe a couple of time though and it's great here it is:

ZESTY POTATO SALAD
Krizinne Cross

1 1/2 lb. Red Potatoes
1/2 c. Italian Dressing
1/4 c. Spicy Brown Mustard or Horseradish Mustard
1 c. sliced celery
1/4 c. minced parsley
3 T. Chopped Green Onions
1/2 c. Diced Yellow or Orange Bell Pepper *optional



1. Cut the potatoes in half's or quarters depending on size. Boil until tender, drain and cool.
2. Mix the Italian dressing and mustard, add cooled potatoes, celery, parsley, green onions, and bell pepper.
3. Chill and serve
