No time to cook - ideas?!


Question: Hi, I never have more than a couple of minutes to make my kids something to eat before they go to their lesons. Ideas? I don't know much about cooking. Mostly I rely on Schneider's Smart Lunch and the instant pot roast. Any other thoughts?

I try to make two meals on the weekend to stick in the oven during the week. We eat it one night and have leftovers another. Freezing is always a great idea, too. Make one, freeze one, or put in smaller casserole dishes, eat one, freeze one. Crockpot is nice, because it's ready when you get home. Here are some easy favorites and a few crockpot ideas:
Cola Chicken

4-6 boneless, skinless chicken breast halves
1 cup ketchup
1 cup cola
2 Tbsp Worcestershire sauce

Place chicken in 9x13 casserole. Sprinkle with salt and pepper. Mix ketchup, cola, and Worcestershire, pour over chicken. Cover, bake at 350 for 50 minutes.

Beef and Potato Casserole

4 medium potatoes, peeled and sliced
1 ? pounds lean ground beef, cooked, drained
1 can cream of mushroom soup
1 can condensed vegetable beef soup
? tsp each salt and pepper

In large bowl, combine all ingredients. Transfer to a greased 3 qt. baking dish. Bake, uncovered 1 hour and 30 minutes at 350 or until potatoes are tender.

Tater Tots and Beef

2 lbs. lean ground beef
1 can golden mushroom soup
1 cup grated cheddar cheese
1 (2 lb) pkg. frozen tater tots

Pat beef into 13 x 9 baking dish. Spread soup over beef, cover with grated cheese. Top with tater tots. Bake covered 1 hours at 350. Uncover last 15 minutes.


Easy Creamy Chicken

6-8 boneless, skinless chicken breasts
1 can cream of chicken soup
1-3oz package cream cheese
1-8oz carton sour cream
3-4 green onions, chopped

Place chicken in 9x13 dish. Sprinkle with salt, pepper, and good seasoned salt. In saucepan, combine soup, cream cheese and sour cream on low heat just until cheese melts and ingredients mix well. Pour mixture over chicken, sprinkle green onions on top. Cover, bake at 300 for 1 hour. Uncover and bake another 15 minutes. Serve over noodles or rice.

Nacho Chicken

6-8 chicken breasts (or 8-10 chicken thighs)
2 cans nacho cheese soup
? cup milk
3 tbsp worchestershire sauce

Place chicken in large baking pan. Sprinkle with salt, pepper, and a spicy seasoned salt. Combine soup, milk, and worchestershire sauce in saucepan until just heated through. Cover and bake at 350 for 1 hour.

Cheesy Pepper Steak

1 ? pound sirloin steak, cut in strips
Seasoned salt
1-16oz pkg. frozen bell pepper and onion strips, thawed
1-16oz pkg. cubed Mexican processed cheese

Sprinkle steak with seasoned salt. Coat large skillet with non-stick vegetable spray and cook steak strips for 10 minutes or until no longer pink. Remove steak from skillet and set aside. Stir in vegetables and ? cup water and simmer for 5 minutes or until all liquid cooks out. Add cheese and turn heat to low. When cheese melts, stir in steak until heated through and serve over hot cooked rice.

Tangy Spareribs

5-6 pounds spareribs
1-6oz can frozen orange juice concentrate, thawed
2 tsp Worcestershire sauce
? tsp garlic powder
Spicy seasoned salt
Pepper

Place spareribs in shallow baking pan, meat side down and sprinkle with salt, pepper, and seasoned salt. Roast at 375 for 30 minutes. Turn ribs, roast another 15 minutes and drain off fat. Combine orange juice, Worcestershire and garlic powder and brush mixture on ribs. Reduce heat to 300. Cover ribs, roast 2 hours or until tender and baste occasionally.

Crockpot:

These are so easy and wonderful. You can’t believe it!

BBQ Ribs

Country Style Ribs
Onion
Bottled BBQ Sauce (any kind you like)

Sear ribs on all sides to seal in juices. Place in crock pot. Cover with sliced onions and BBQ sauce. Cook on low 8-10 hours. Yummy!!!

Serve with baked beans, cornbread…and this salad is great:

Caesar Coleslaw

1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing

Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!

Rice and Beans and Sausage

3 celery ribs, chopped
1 onion, chopped
4 garlic cloves, minced
1 3/4 cups V8 juice (or tomato juice)
2 16 oz. cans kidney beans, drained
3/4 tsp dried oregano
3/4 tsp. dried thyme
1/2-3/4 tsp. red pepper flakes (less if you don't like spicy)
1/2 tsp pepper
2 lb. fully cooked smoked kielbasa cut into 1/4 inch slices.
4 cups cooked rice

Combine all ingredients except rice in slow cooker. Cover. Cook on low 4-6 hours. Serve over rice. Yummy!!

Creamy Crockpot Chicken

1 envelope dry onion soup mix
2 cups sour cream
1 can cream mushroom soup
Salt and pepper to taste
6 boneless, skinless chicken breasts

Combine first 4 ingredients. Pour over chicken in crockpot. Cook on low 8 hours. Serve over noodles or rice.

CROCKPOT CHICKEN AND RICE CASSEROLE

4 chicken breasts
1 can cream of celery soup
1 can cream of chicken soup
1 can cream of mushroom soup
2 stalks celery, diced
1 bay leaf
1 large onion, chopped
1/2 teaspoon Bell's Poultry seasoning
3 cloves garlic, minced
1 cup Minute Rice

Mix the cans of soup with the rice at the bottom of the Crockpot. You may substitute the type of soup you use in any combination (for example: 2 cans cream of chicken soup and one can celery soup).
Add the diced celery, onion, and garlic and stir. Submerge the chicken in the soup.

Turn heat to high for 10 minutes, then reduce to medium and cook for 4-5 hours. Or cook on high for 3-4 hours.


Pork Parisienne

6-8 boneless pork chops
Salt and pepper
Paprika
1 can cream of mushroom soup
1 small can sliced mushrooms
1 cup sour cream
? cup water

Sprinkle pork with salt, pepper, and paprika. Place in crockpot. Mix soup, water, mushrooms, and sour cream. Pour of pork chops. Sprinkle with paprika. Cover and cook low for 6-8 hours. Serve over rice or noodles.

For chicken parisienne: Substitute the pork for 6 boneless, skinless chicken breasts

And a couple great casseroles:

Crinkly Noodle Casserole

1 pkg. egg noodles
2 cans cream of chicken soup
1 can cream of mushroom soup
1 can corned beef
16+ oz. Velveeta, cubed

Cook noodles according to package direction until al dente. Meanwhile, mix the rest of the ingredients in a saucepan. Stir until cheese melts. Add milk until the consistency is creamy. Drain noodles and pour into a large casserole dish. Pour corned beef/cheese mixture over the top and mix slightly. Bake in 350 oven for 30 minutes or until bubbly.

HAMBURGER AND RICE CASSEROLE

1 lb. hamburger, lean
1 onion, chopped (less if you like)
1/4 green pepper
Salt & pepper, to taste
1 can cream of mushroom soup
2 c. milk
1 c. raw rice, wet with water

Put meat in greased skillet, add onion, green pepper, salt and pepper. Stir together, low heat until meat loses red color and is crumbly. Butter casserole and spread uncooked rice on bottom. Mix milk and soup together. Pour into meat mixture in skillet. Then pour all over rice. Bake at 350 degrees for 1 hour. Check for dryness, add water (or milk) if necessary.





Chris’ Best Hamburger Casserole Ever

1? pounds hamburger
? onion chopped
3or more cloves garlic, chopped
1 can cream of mushroom soup
1 soup can milk
1 cup sour cream
1 ? cups sharp cheddar cheese, divided
1/2 tsp oregano
? tsp basil
1 tsp seasoned salt
1 8 oz cube cream cheese
1 12 oz. package egg noodles, cooked

Cook hamburger with onions and garlic until cooked through. Drain, if necessary. Add mushroom soup, milk, sour cream, 1 cup cheddar cheese, spices, and cream cheese. Stir and cook until cheese melts and mixture is bubbly. Add meat mixture to cooked noodles. Stir gently to mix. Add pepper to taste. Spread in a 13 x 9 casserole. Sprinkle with ? cup cheese, cover with foil. Bake in 350 oven 20 minutes or until bubbly. Enjoy!

Pita Bread

put 2tbsp . spaghetti sauce on each pita bread
add grated cheese
add diced green pepper,
some chopped up ham
..whatever toppings you want.

put in PreHeated 425F oven for 8-10min on cookie sheet..
mini pizzas* yummmmmmmm (fast, easy, filling)

Corned Beef Flan.

Begin with a pastry shell.
Shred your corned beef and place in shell, add some onion and diced cooked carrot.
Whisk together 3-6 eggs, depending upon the size.
Sprinkle with tasty cheese, or a cheese you like.
Bake in a preheated 165C oven until the cheese is browning and the eggs are set.

You could have these in the fridge, cut like a pizza and individually wrapped in cling film.
They could be nuked for a minute or two, or eaten cold on the run.

I used to make a big pot of italian meat balls and sausage and pasta,then put them in individual plastic freezer plates.
Label them.

I also used to make a beef stew and do the same thing.

This was done on weekends so that the kids would have something to eat while I was at work

Whatever you are good at (everyone has one meal they are good at) make it and freeze it.

thats what i do when i dont have time to cook for my little sister

hot pockets, pizza rolls, made lasanga and just bake it, frozen chicken nugget and just microwave it with noodles, made foods that are frozen, go to walmart's food section and take them and ask them what kind of things they like
