Great casserole:
Chris’ Best Hamburger Casserole Ever
1? pounds hamburger
? onion chopped
3or more cloves garlic, chopped
1 can cream of mushroom soup
1 soup can milk
1 cup sour cream
1 ? cups sharp cheddar cheese, divided
1/2 tsp oregano
? tsp basil
1 tsp seasoned salt
1 8 oz cube cream cheese
1 12 oz. package egg noodles, cooked
Cook hamburger with onions and garlic until cooked through. Drain, if necessary. Add mushroom soup, milk, sour cream, 1 cup cheddar cheese, spices, and cream cheese. Stir and cook until cheese melts and mixture is bubbly. Add meat mixture to cooked noodles. Stir gently to mix. Add pepper to taste. Spread in a 13 x 9 casserole. Sprinkle with ? cup cheese, cover with foil. Bake in 350 oven 20 minutes or until bubbly. Enjoy!
Easy Favorites:
Cola Chicken
4-6 boneless, skinless chicken breast halves
1 cup ketchup
1 cup cola
2 Tbsp Worcestershire sauce
Place chicken in 9x13 casserole. Sprinkle with salt and pepper. Mix ketchup, cola, and Worcestershire, pour over chicken. Cover, bake at 350 for 50 minutes.
Beef and Potato Casserole
4 medium potatoes, peeled and sliced
1 ? pounds lean ground beef, cooked, drained
1 can cream of mushroom soup
1 can condensed vegetable beef soup
? tsp each salt and pepper
In large bowl, combine all ingredients. Transfer to a greased 3 qt. baking dish. Bake, uncovered 1 hour and 30 minutes at 350 or until potatoes are tender.
Tater Tots and Beef
2 lbs. lean ground beef
1 can golden mushroom soup
1 cup grated cheddar cheese
1 (2 lb) pkg. frozen tater tots
Pat beef into 13 x 9 baking dish. Spread soup over beef, cover with grated cheese. Top with tater tots. Bake covered 1 hours at 350. Uncover last 15 minutes.
Easy Creamy Chicken

3 tbsp worchestershire sauce
Place chicken in large baking pan. Sprinkle with salt, pepper, and a spicy seasoned salt. Combine soup, milk, and worchestershire sauce in saucepan until just heated through. Cover and bake at 350 for 1 hour.

1 ? pound sirloin steak, cut in strips
Seasoned salt
1-16oz pkg. frozen bell pepper and onion strips, thawed
1-16oz pkg. cubed Mexican processed cheese
Sprinkle steak with seasoned salt. Coat large skillet with non-stick vegetable spray and cook steak strips for 10 minutes or until no longer pink. Remove steak from skillet and set aside. Stir in vegetables and ? cup water and simmer for 5 minutes or until all liquid cooks out. Add cheese and turn heat to low. When cheese melts, stir in steak until heated through and serve over hot cooked rice.

5-6 pounds spareribs
1-6oz can frozen orange juice concentrate, thawed
2 tsp Worcestershire sauce
? tsp garlic powder
Spicy seasoned salt
Pepper
Place spareribs in shallow baking pan, meat side down and sprinkle with salt, pepper, and seasoned salt. Roast at 375 for 30 minutes. Turn ribs, roast another 15 minutes and drain off fat. Combine orange juice, Worcestershire and garlic powder and brush mixture on ribs. Reduce heat to 300. Cover ribs, roast 2 hours or until tender and baste occasionally.

Slice 2 peeled cucumbers. Slice thinly. Add 1 small sliced or chopped red onion. Cover with bottled red wine vinaigrette dressing. Salt and pepper to taste. Best if you let sit in refrigerator for at least an hour.
Bacon Salad
4 slices bacon
1 lg bowl salad greens
? chopped red onion
Salt
Pepper
Red Wine Vinegar
In salad bowl, combine the salad and onion. Coat with ? cup red wine vinegar, salt and pepper. Chop bacon into little pieces. Cook until crispy. (You may need to add a little olive oil if bacon is very lean). Pour bacon and grease over salad.
Broccoli Cheese Salad
4 cups broccoli, cut into small pieces
1 red onion, chopped
1 cup cubed cheddar cheese
6 slices bacon, cooked, crumbled
Combine above ingredients. Combine 1 cup mayonnaise, ? cup sugar, and 2 Tbsp vinegar, salt and pepper to taste. Pour over salad.

Broccoli Salad
4 cups broccoli chopped into 1 inch pieces
1/4 cup finely chopped red onion
1/4 chopped celery
1/4 cup raisins
1/2 cup raw unsalted sunflower seads
1/2 lb. bacon, cooked and crumbled
1/4 cup white sugar
3/4 cup prepared salad dressing
2 tsp. cider vinegar
salt and freshly ground black pepper to taste
Place the chopped broccoli in a large serving bowl. Mix in the onion, celery, raisins, sunflower seeds and bacon. Combine the sugar with the salad dressing or mayonnaise. Add the vinegar and season with salt and pepper. Pour over the salad and toss until well combined. Refrigerate for a few hours before serving.
Delicious Smashed Potatoes
4 large potaotes
1 tablespoon extra-virgin olive oil
2 tablespoons butter
4 cloves garlic, chopped
4 scallions, chopped
1 cup ricotta cheese
1/2 cup milk
1 cup shredded or grated Parmigiano Reggiano or Romano cheese
Peel potatoes and cut them into small chunks. Place potatoes in a pot and cover with cold salted water. Bring potatoes up to a boil over high heat. Cook until tender. Approx. 15 minutes. While potatoes are cooking, in a small pan over medium heat add vegetable oil and butter. When butter melts into the oil, add chopped garlic. Saute garlic 1 to 2 minutes, the add scallions and remove pan from heat and reserve. Now that the potatoes are done, drain then return to hot pot . Add the reserved garlic and scallion mixture to the potatoes along with the ricotta, milk and grated cheese. Smash with a hand masher until all is combined. Season with salt and pepper as desired.
Best Ever Shrimp
4 pounds of shrimp-raw
4T chilli powder
1T salt
1/4 lb butter
1 onion chopped
1 garlic clove minced
1C ketchup
1C worcestershire sauce
1/3C brown sugar
1 lemon sliced
2T lemon juice
1/2 tsp crushed bay leaves
1 tsp thyme
1/2 cayenne pepper
tobasco or other hot sauce to taste
De-vein the shrimp if it did not come already done. Use scissors to cut the back of the shell open and pull out the vein by hand. This is very easy to do and takes only a couple minutes to do the whole lot. Sprinkle about 1T chilli powder and about 1T salt on the shrimp in a large bowl, cover the bowl and refrigerate for 30 minutes.While the shrimp is chilling, melt the butter in a shallow pan. When it is melted put the onion and garlic in the pan. Place all the rest of the ingredients in the pan in the order they appear in the recipe along with the salt and remaining chilli powder at the end. Use only a small amount of tabasco sauce to start and add more according to how hot you like it. I put in about 3 dashes. After 15 minutes remove the lemon slices. Pour about one quarter the sauce mixture over the shrimp and return to the fridge. Heat up your barbie. When it is hot put the shrimp on the upper level not too close to the flame. Let the shrimp cook until it is all pink outside.Remove from heat, dip in sauce heated or cold.
Cheese Spread Recipe
1 cup mayo
1 cup cheddar or swiss cheese - grated
1 small onion chopped
1 tbsp. butter
1 clove garlic minced
1 tbsp. cayenne pepper
1/2 tsp. dijon (opt)
1/2 tsp. worchestershire (opt)
Preheat over 350 degrees. Saute onion in butter until translucent. Add remaining ingredients. Mix Well. Bake in small baking dish for 20 minutes. Serve hot with crackers and baquette.
Juice Chicken
4 boneless skinless chicken breasts
2 cups of any clear juice ie grape or apple
1Tbls. cooking oil
Brown the chicken in a frying pan with a tablespoon of oil When the chicken is cooked put in all of the juice at once. Bring to a boil. Watch over the chicken carefully at this stage. Let all of the juice boil off. When the juice becomes thicker like syrup stir the chicken around in it.
Mama's Biscuits Recipe
2 Cup flour
4 tsp baking powder
1 tsp salt
1/4 cup butter or margarine softened
1 Cup milk
Heat oven to 425 degrees F. Combine dry ingredients in a large bowl, then make a well in the centre of it and add butter and milk. Mix thoroughly with a fork until a stiff dough forms. Roll the dough out on a counter that has been dusted with flour. Use a cookie cutter or the opening of a drinking glass to cut out biscuits. Place them on an ungreased cookie sheet. Put the sheet on the middle rack in the oven.
Bake for 12 minutes. Makes about 15 medium sized biscuits.

Bruschetta Pizza
1 1/2 cups diced fresh tomatoes
1/4 cup chopped onion
2 cloves garlic, minced
1/2 tsp. dried basil
1 - 12" prebaked whole wheat pizza crust
1/2 cup prepared sun dried tomato pesto
1 -1/2 cups shredded mozzarella
1/4 cup torn fresh basil leaves
1) Preheat oven to 400F (200C)
2) in bowl, combine tomatoes, onion, garlic, and dried basil. Set aside 1/2 cup of mixture in a bowl aside in step 4
3) Spread pizza crust with sun dried tomato pesto, sprinkle remaining tomato mixture over crust and top with mozzarella cheese.
4) place pizza directly on the middle rack of the oven. Bake 10-15min. or until crust is golden and cehese is bubbly. Remove pizza from oven, sprinkle with basil leaves and reserved tomato mixture.
cook tip- substitute diced regular tomatoes by canned plum tomatoes , place in colander to drain excess liquid. Save on preparation time by using minced garlic available in jars.
Change it up- substitute canadian friulano cheese for the mozzarella. Add 1 tsp. of green pepper hot sauce to the tomato mixture.

1 1/2 cups all purpose flour
1 cup whole wheat flour
1 cup shredded canadian brick cheese
1 tbsp. baking powder
1 tsp . ground cinnamon
1/4 tsp. salt
1 -1/2cup diced peeled apples (crispin, spartan, empire)
1/2 cup chopped toasted pecans
1 eg
1 cup milk
3/4 cup packed brown sugar
1/4 cup butter-melted
1) Preheat oven to 375F ..butter nonstick muffin pans or line with paper liners
2) in large bowl, combine all purpose and whole wheat flours, cheese, baking powder, cinnamon and salt. Stir in apples and pecans ..In another bowl, whisk together egg, milk, sugar and butter. Pour over dry ingredients and stir just until moistened.
3) Spoon into prepared muffin pan. bake for 22-25min...or until tops are firm to the touch. let cool in pan for 5min then transfer to rack to cool completely.
cook tip- if brown sugar is lumpy, pass through a sieve or crumble with finger tips
change it up - add 2 tbsp. of chopped crystallized ginger to dry ingredients. Substitute canadian cheddar for the brick. if desired, top with thin aple and chopped toasted pecans
