What to do with hard boiled eggs, leftover from Easter?!

SPINACH SALAD

1 kg of spinach
2-3 medium size potatoes
4 eggs, hard boiled
garlic, finely minced
salt
olive oil

Boil the spinach, but do not overboil. Place cooked spinach in a bowl. Boil the peeled potatoes. Cut them into smaller chunks and mix with the spinach.

Add minced garlic, salt and some olive oil. Mix well.

Cover with slices of hard boiled eggs.

CHICKEN CHILAQUILES

6 tortillas
1/3 chicken, cooked
2 hard boiled eggs, chopped
1 cup chicken broth
4-5 fresh chives, minced
2 radishes, minced
1 onion, minced
1 stem coriander
1 green chili pepper, chopped
2 green tomatoes
about 1/4 cup oil
1 pkg cream cheese
oil for deep frying

Heat oil to 365°F.

Cut tortillas into wedge shapes (or quarters). Fry in hot oil until lightly golden. Drain on paper towels and set aside covered with a cloth so they won't dry out and will stay warm.

Meanwhile, in a skillet, cook tomatoes and mash with coriander, chili pepper and onion. Add a few tablespoons of oil and fry until very hot. Reduce heat; add chicken broth.

Pour 1 tablespoon oil into a baking pan and line with 3 tortillas. Spread a layer of cream cheese, add a layer of chicken, then half of the sauce. Cover with the remaining tortillas, then repeat with a layer of cream cheese, chicken and sauce. Remove from oven and sprinkle with chopped boiled eggs before serving.

Bake at 325°F for 30 minutes.

Make a chef salad.

If they've been left out at room temp over 4 hours, pitch them. They are unsafe to eat.

If not, chop and add to chicken or tuna salad, use on chef salads. You can also garnish Chicken ala King w/ boiled egg slices, and include chopped boiled egg in turkey gravy.

Good question, I am looking for ideas myself!

If they were sitting in an Easter basket and were not refrigerated, don't use them at all.
If they're OK, you can put some in a spinach salad.

I also use them in my salad. Just cut into "rings" and place on top.

I haven't tried it yet but it sounds good.

You could make a grilled chicken spinach salad and cut the eggs up on top of it. You could also make chicken salad and tuna salad. You can make any type of salad and add the eggs. Hope you find something you like. Good luck!

How about a regular salad, or tuna salad with boiled eggs, or sprinkle salt and pepper on it and eat it like that or save them for next easter...or blow them up i a science project.

Prince of Wales Spinach Salad Flambe Recipe
Ingredients
6 bunches spinach (12 ounces each), washed and dried
6 hard-boiled eggs, sliced
1/4 tsp salt
1/2 tsp ground pepper
12 strips bacon, crisply fried and chopped
3/4 cup bacon drippings
1/2 cup malt vinegar
1/4 cup lemon juice
4 tsp sugar
1 tsp Worcestershire sauce
1-1/2 ounces brandy (100 proof)


Instructions
Tear spinach into bite-sized pieces and place in large salad bowl. Add egg slices, salt and pepper.

Mix remaining ingredients except brandy in small saucepan and heat until very hot. Heat brandy briefly, add to saucepan and ignite. Pour flaming dressing over spinach and toss gently but thoroughly. Serve on warm salad plates.

Yield: 6 servings

Potato salad. I like a lot of eggs in my potato salad, so I'd make a big bowl of this to go with whatever else you're eating.

How about egg salad or deviled eggs or use them in a fresh garden saled.

egg salad or i just eat them! and sometimes i do make deviled eggs with them!

You could chop them up and put them in meatloaf, but like mentioned before don't use them if they have been sitting out for a while. You could also try pickling them, if you like pickled eggs

There's really not too much you can do with them. I use them in potato salad, macaroni, and tuna salad for fillers. If you like them you can devil eggs and they make an interesting thing for parties that those really brave guys will try.

THROW THEM OUT YOU CANNOT EAT THEM

Egg salad sanwiches, deviled eggs.

Why can't they be eaten if left out a little?

make HEALTHY Deviled eggs.....
Cut them in halves lenthwise and scoop out the yokes,
Instead of using the yokes with mayo, etc....
substitute Hummus with a dash of Worcheshire Sauce and
fill the halves. Then top with a few slivered almonds and a pinch of paprika.

Or you can toss them at passing cars.... no no don't do that!!! :)

Curried Eggs
6 hard cooked eggs 1/2 t. salt
2 T. butter Dash of pepper
1 sm. onion, minced 1 1/2 t. cornstarch
1 apple, chopped 1 1/2 t. curry powder
1/4 c. blanced almonds 1/4 c. milk
1 3/4 c. chicken stock 1/2 t. paprika
Saute onion, apple and almonds in butter until golden. Add the stock and simmer 10 min. Add salt and pepper. Dissovle the cornstarch and curry powder in the milk Cook til thickened. Slice the eggs and add to the sauce. Serve on toast. Sprinkle with paprika.
