What is the best pickled egg recipe?!

Ingredients

12 dragon eggs (if you can't find fresh dragon eggs, use chicken eggs)
4 cups tap water
1 cup beet juice
1 small onion cut into rings
1 cup vinegar
1 clove garlic
1 bay leaf
2 tsp. pickling spice
1/2 tsp. salt
enough food coloring - colors of your choice

Directions

Place eggs in sauce pan and cover with with water.
Cook eggs until they are hard boiled (about 8 - 10 minutes of
boiling). Slowly add lukewarm water to eggs to help cool.
Mix water, beet juice, vinegar, garlic, food coloring
and spice in cauldron. Mix well. (Chant: Mix and Stir, Mix and
Stir. .) Use tongs to gently remove eggs from sauce pan. Gently
crack shells all the way around eggs. Place cracked eggs into
cauldron. Cover eggs with onion rings. Cover cauldron with plastic
wrap and let brew in refrigerator for 2 days (be sure to turn eggs in
morning and at night). After brewing for 2 days, pickled dragon eggs
are ready for eating. Peel shells and amaze your friends.

I like to pickle my eggs in with beets so they get a pretty pink or purple color depending upon how long you pickle them. For pickled beets, after the beets are cooked, peeled and sliced, I put them in a vinegar, sugar and water solution with a few whole cloves. The vinegar/sugar/water is 2 parts cider vinegar to 1 part sugar to 1 part water. You can zap the vinegar and sugar together in the microwave so the sugar dissolves and then add water or ice cubes to cool it down. Then pour over the beets and add in the eggs. Chill beets for at least 4 hours.

I like pickled eggs, but not enough to go to the trouble to make them, so when I finish a jar of dill pickles, I save the brine & put like 4 eggs in there. That's plenty for me, & I use the brine..
