Low fat recipes with potato?!


Question: I am looking for a low fat, not too heavy recipe for a dinner where I have a lot of potatos to use up.

Something that can be frozen.

Maybe a potato and salmon pie?

Serve these pancakes with butter and honey or your favorite syrup, along with bacon or sausage and eggs.
INGREDIENTS:
1/2 cup raw , finely grated potato, about 1 medium (8 to 10 oz.) baking potato
1 cup cooked mashed potato, about 1 medium (8 to 10 oz.) baking potato
dash salt
1 2/3 cups all-purpose flour, about 8 ounces
1/2 teaspoon baking powder
1 to 1 1/4 cups milk
1 large egg
PREPARATION:
Combine grated and mashed potatoes. Add salt and flour. Beat egg and add to mixture with enough milk to make a thick batter that will drop from a spoon. Drop by tablespoonfuls onto a hot oiled griddle or skillet.

Cook over medium heat for 3 to 4 minutes on each side.

you could serve some marinated chicken breasts or whtever you like
with roasted potatoes (marinate them with olive oil, rosemary, bit of salt and put in oven) and serve with a salad
sounds pretty satisfying to me but not sure what you like
